Passover is just a few days away, so I’m here to simplify meal time by rounding up some of my favorite healthy passover recipes that are delicious on passover, or all year round!

Most of these recipes are suitable for both Sephardic and Ashkenaz Jews, or can be modified to leave out the kitniyot- a Hebrew term that groups the foods that Ashkenaz Jews avoid during passover, including rice, legumes, and seeds. Just be sure to use certified kosher for passover ingredients, depending on what you follow in your home!

Whether you’re observing the holiday or not, these naturally gluten-free recipes are so delicious, you wouldn’t even know they’re kosher for passover.

Common substitutions

Coconut sugar: if kosher for Passover coconut sugar is harder to find, you can substitute equal parts light brown sugar.

Tahini: if you would like to make a recipe kitniyot free, almond butter would be a good substitute in the s’mores blondies or the shake! The tahini chocolate chip cookies are the same as the almond flour chocolate chip cookies, so I suggest following that recipe!

Cassava flour can be interchanged with tapioca flour if needed!

If a recipe calls for breadcrumbs, you can swap tapioca flour or matzah meal!

If you’re looking for even more recipes, be sure to check out last year’s round up for passover dessert and lunch & dinners!

grab the full recipe below!

Recipe:
1 lb pasta, I used rigatoni
2 small zucchini, cut into rounds then quarters
1 cup roasted corn, I use pre-roasted frozen corn, thawed.
1 can (15 oz) cannellini beans, drained
1 red bell pepper or 1 cup mini peppers, sliced
4 oz feta cheese, crumbled
⅓ cup green olives, chopped. I used castelvetrano
2-3 cups arugula
Ken’s Simply Vinaigrette Lemon Dressing
Ken’s Simply Vinaigrette Greek Dressing
Salt & pepper

1. Prepare the pasta as instructed on the package. Drain and set aside
2. Preheat the oven to 425 F. Add the quartered zucchini to a baking dish and toss with 2 tbsp of Ken’s Simply Lemon Vinaigrette with a pinch of salt. Bake or air-fry for about 25 minutes on the top rack
3. Once the zucchini is ready, add it to a large mixing bowl with the cooked pasta, roasted corn, white beans, feta cheese, olives, sliced peppers, and arugula.
4. In a small bowl, combine ¼ cup of the Ken’s Simply Vinaigrette Lemon + ¼ cup of the Ken’s Simply Vinaigrette Greek. Mix well and toss with the pasta. Season with salt & pepper as needed
5. Leftovers can be refrigerated for up to 4 days.
