If you’ve been following me on Instagram, you know that I’ve been obsessed with all things cookies these last few weeks. So, in honor of the holiday season, I’m rounding up 10 of my favorite healthy holiday cookies from the blog for you guys to bake for you and your families!

We all need a little cheer just about now, and nothing beats a big batch of freshly baked cookies in my opinion.

Gluten-free Snickerdoodles

These gluten-free Snickerdoodles taste just like the classics, but are made with almond flour and coconut oil to keep them gluten and dairy-free. Traditionally, snickerdoodles have a slight tang from cream of tartar, but I substituted lemon and baking soda to give them the same flavor, with ingredients you likely have at home!

Monster Cookies

These gluten-free Monster Cookies truly have it all- peanut butter, oats, chocolate chips and chocolate candies. They’re thick, soft-centered, and pack in all of the best flavors. You can use holiday themed M & M’s to make them more festive!

Double Chocolate Peppermint Cookies

Double Chocolate Peppermint Cookies have seriously become my new favorite! If you love fudgy brownies, you’ll LOVE these cookies! You can swap the peppermint extract for vanilla extract if you want to keep them a classic chocolate cookie. I love throwing in some marshmallows and white chocolate to switch things up!

Gluten-free Sugar Cookies

The best gluten-free Sugar Cookies to make this holiday. They’re made of a blend of almond and tapioca flour, and have that perfect crunchy bottom with pillowy centers. Top them with your favorite icing and sprinkles, and feel free to get creative decorating them!

Peanut Butter Blossoms

If you love these classic cookies, you’ll also love this gluten-free version of Peanut Butter Blossoms. A perfectly soft peanut butter cookie topped with a Hershey kiss. You can top these with dark chocolate peanut butter cups to keep them dairy-free!

White Chocolate Macadamia Cookies

I don’t know about you guys, but White Chocolate Macadamia Cookies used to be a favorite of mine growing up. My versions is gluten-free, and tastes so delicious with a tall glass of almond milk!

Soft-baked Oatmeal Raisin Cookies

Another favorite of mine is Oatmeal Raisin Cookies! These soft-baked oatmeal raisin cookies are so delicious, and can be made with or without raisins- depending on your preference.

Almond Flour Chocolate Chip Cookies

My most popular recipe on my blog- Almond Flour Chocolate Chip Cookies! Light & fluffy, gluten-free, dairy-free, and loaded with chocolate chunks and sea salt. These are sure to be a favorite with everyone!

Chocolate Chip Peanut Butter Oatmeal Cookies

An oldie but a goodie- Chocolate Chip Peanut Butter Oatmeal Cookies! Nothing beats that peanut butter chocolate combo, and these cookies have the perfect balance of peanut butter + chocolate, and are so easy to whip up!

Nut-free Chocolate Chunk Cookies

Lastly but certainly not least, nut-free Chocolate Chunk Cookies! I filled these with sun-flower seed cups, but you can use any chocolate you like. They’re soft-baked, perfectly sweet, and great for any family member with nut allergies!

one thing about me is I will always have a colorful pasta salad in the fridge during the warmer months— it’s the perfect way to pack in carbs, fiber and protein for a quick & nourishing lunch
 
this one combines @kensdressings Simply Vinaigrette Lemon Dressing & Ken’s Simply Vinaigrette Greek Dressing for the ultimate flavor combo— fresh, zesty & full of herbs!

Recipe:
1 lb pasta, I used rigatoni
2 small zucchini, cut into rounds then quarters
1 cup roasted corn, I use pre-roasted frozen corn, thawed.
1 can (15 oz) cannellini beans, drained
1 red bell pepper or 1 cup mini peppers, sliced
4 oz feta cheese, crumbled
⅓ cup green olives, chopped. I used castelvetrano
2-3 cups arugula
Ken’s Simply Vinaigrette Lemon Dressing
Ken’s Simply Vinaigrette Greek Dressing
Salt & pepper
 
1. Prepare the pasta as instructed on the package. Drain and set aside
2. Preheat the oven to 425 F. Add the quartered zucchini to a baking dish and toss with 2 tbsp of Ken’s Simply Lemon Vinaigrette with a pinch of salt. Bake or air-fry for about 25 minutes on the top rack
3. Once the zucchini is ready, add it to a large mixing bowl with the cooked pasta, roasted corn, white beans, feta cheese, olives, sliced peppers, and arugula.
4. In a small bowl, combine ¼ cup of the Ken’s Simply Vinaigrette Lemon + ¼ cup of the Ken’s Simply Vinaigrette Greek. Mix well and toss with the pasta. Season with salt & pepper as needed
5. Leftovers can be refrigerated for up to 4 days.
