I think it’s safe to say my obsession with vegetables is quite real. I’ve always loved veggies, and honestly keep them simple most of the time. BUT, I love coming up with ways to spice them up every now and then. I seriously think you can level up any meal with a few simple veggie side dishes.

If you’re looking for new ways to switch up your weekly veggie game, I rounded up 10 of my favorite veggie recipes from the blog. They’re all simple to make, and a perfect way to add some nutritious flavor to your meals.

1. “Cheesy” Roasted Broccoli

Crispy oven-roasted broccoli is a delicious side dish to serve up with any dinner. The broccoli is tossed with just a few simple spices, and comes together in 30 minutes!

2. Maple Balsamic Brussels Sprouts

These maple balsamic brussels sprouts are seriously delicious. They’re roasted in the oven with some olive oil, balsamic vinegar and maple syrup, and get the best crisp and caramelization! If you aren’t a huge brussels sprouts fan, this recipe will change that.

3. Parmesan Crusted Cauliflower

Parmesan crusted cauliflower bites are the newest addition to my cauliflower bites obsession. They pack in some delicious cheesy flavor, and are perfectly crunchy from the crumb coating.

4. Roasted Cabbage with Maple Tahini

This roasted cabbage is crispy, flavorful, and honestly so addicting. It’s one of those dishes thats best eaten fresh, and can even be made to snack on throughout the day. It’s paired with a creamy maple tahini sauce which honestly can be used as a dip or salad dressing!

5. Vegan Broccoli Fritters

These vegan broccoli fritters are the perfect little something to meal prep for the week! They’re crispy, loaded with fiber, and topped with a simple homemade chipotle mayo dip.

6. Kale Tahini Caesar

This kale tahini caesar salad is a delicious way to change up your veggie game! It has a creamy tahini dressing that’s massaged into a bed of kale, then topped with crispy spiced chickpeas and pickled red onions.

7. Baked Orange Cauliflower

These delicious baked orange cauliflower bites may just be my favorite cauliflower recipe yet! The Cauliflower florets are baked and battered in a simple gluten-free coating, and tossed in a sweet citrus glaze, with a subtle hint of spice.

8. Crispy Baked Carrot Fries

Crispy baked carrot fries are one of my absolute favorite side dishes! They’re loaded with flavor, highly nutritious, and so addicting. Serve them as a snack, or with your favorite meal during the week for a simple weeknight dinner.

9. Chili Peanut Roasted Brussels Sprouts

Spicy chili peanut roasted brussels sprouts are the perfect mix of sweet & spicy! They’re a delicious side dish to bring to your dinner table, and truly taste like they’re from a restaurant!

10. Crispy Baked Zucchini Chips

Zucchini chips are such an easy, fun side dish to serve with any meal! Anything coated in breadcrumbs is always a win in my book 🙂 I love serving these with a side of marinara sauce and a side of fish.

one thing about me is I will always have a colorful pasta salad in the fridge during the warmer months— it’s the perfect way to pack in carbs, fiber and protein for a quick & nourishing lunch
 
this one combines @kensdressings Simply Vinaigrette Lemon Dressing & Ken’s Simply Vinaigrette Greek Dressing for the ultimate flavor combo— fresh, zesty & full of herbs!

Recipe:
1 lb pasta, I used rigatoni
2 small zucchini, cut into rounds then quarters
1 cup roasted corn, I use pre-roasted frozen corn, thawed.
1 can (15 oz) cannellini beans, drained
1 red bell pepper or 1 cup mini peppers, sliced
4 oz feta cheese, crumbled
⅓ cup green olives, chopped. I used castelvetrano
2-3 cups arugula
Ken’s Simply Vinaigrette Lemon Dressing
Ken’s Simply Vinaigrette Greek Dressing
Salt & pepper
 
1. Prepare the pasta as instructed on the package. Drain and set aside
2. Preheat the oven to 425 F. Add the quartered zucchini to a baking dish and toss with 2 tbsp of Ken’s Simply Lemon Vinaigrette with a pinch of salt. Bake or air-fry for about 25 minutes on the top rack
3. Once the zucchini is ready, add it to a large mixing bowl with the cooked pasta, roasted corn, white beans, feta cheese, olives, sliced peppers, and arugula.
4. In a small bowl, combine ¼ cup of the Ken’s Simply Vinaigrette Lemon + ¼ cup of the Ken’s Simply Vinaigrette Greek. Mix well and toss with the pasta. Season with salt & pepper as needed
5. Leftovers can be refrigerated for up to 4 days.
