It’s delicious as a snack, or served alongside your favorite carb + protein for a fully balanced dinner.

My Instagram feed has been filled with a lot of sweets lately. As much as I love my baked goods, I needed to change it up with some veggie action.

Roasted broccoli has to be one of my favorite side dishes. There’s so much you can do with it, and it’s truly so easy to throw together.

You just pop these in the oven while you prepare the rest of your meal, and you’ve got a perfect vegetable side dish that the whole family will love!

The broccoli florets are tossed with extra virgin olive oil, salt & pepper, garlic powder, smoked paprika, and nutritional yeast. The nutritional yeast gives the perfect vegan “cheesy” flavor,” and adds the best crisp!

The flavors come together to create the most delicious, crispy broccoli florets that are seriously addicting.

I’ve been trying to get simple side dishes up on the blog for when you’re looking for something quick, but also nutritious. There are so many ways to change up your veggie game during the week, and I hope to simplify that for you!

Ingredients

  • 2 small heads of broccoli cut into florets, about 4 cups
  • 3 tbsp olive oil
  • 2 tbsp nutritional yeast
  • 3/4 tsp salt
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1/2 tsp smoked paprika

Serve with

  • Pan-seared Salmon
  • Sesame Ginger Tofu
  • Spinach & White Bean Burgers

Directions

  1. Preheat your oven to 400 F.
  2. Rinse your broccoli florets, and toss them with the olive oil and spices. Layer them onto a baking sheet.
  3. Bake for 25 minutes, until crispy on top. Serve fresh with your favorite main dish!

This is my go to broccoli recipe, so perfectly tender!! I like adding extra red pepper for some kick!
