I’m all about the simple side dishes during the week! These maple balsamic brussels sprouts are SO delicious and easy to make, they’re the perfect side to any meal.

They’re roasted in the oven with some olive oil, balsamic vinegar and maple syrup, and get the best crisp and caramelization! If you aren’t a huge brussels sprouts fan, this recipe will change that.

I always try to change up our veggie game to keep things interesting week after week. Brussels sprouts always remind me of fall, specifically Thanksgiving, so we tend to eat more of them during this time.

Brussels sprouts have somehow gotten a bad rep. If they’re made properly they actually taste delicious! I mean, my apartment will stink for a whole week but it’s totally worth it.

They’re perfectly crispy, lightly sweetened, and are definitely a crowd pleaser!

Maple Balsamic Brussels Sprouts

I can’t emphasize enough how easy these maple balsamic brussels sprouts are! You only need 5 ingredients that you likely have around. You’ll be left with a delicious side dish for your weeknight dinner.

Some tips for best results:

  • use an extra virgin olive oil for the best quality
  • make sure to trim off the black parts of the brussels sprouts
  • spread them apart on the sheet pan, don’t overcrowd! this is key to getting them crispy
  • use a good quality balsamic vinegar

Ingredients

  • 1 lb brussels sprouts

  • 3 tbsp olive oil

  • 2 tbsp balsamic vinegar

  • 1 tbsp pure maple syrup

  • 1/2 tsp salt

Directions

  • Preheat your oven to 400 F.
  • Cut off the stems of the brussels sprouts, then slice in half.
  • Place the brussels sprouts onto a parchment lined baking sheet. Toss together with the olive oil, balsamic, maple and salt to coat evenly.
  • Bake for 35 minutes, flipping halfway through.
