If you’re looking for last minute healthy Easter brunch inspiration, I’ve got you covered with these super simple recipes! I’ve rounded up some of my favorite baked goods + sides dishes to make today, or any other day of the week!

We personally don’t celebrate Easter, but love a good weekend brunch spread. I’ve included both sweet and savory recipes (mostly sweet 🙂 ) that would come together to make for the perfect spread.

Most of the recipes come together between 30-60 minutes, so are perfect if you’re looking for something quick to make. All the recipes are linked throughout the post, and again at the end.

1. Lemon Blueberry Loaf

This delicious, gluten-free lemon blueberry loaf is perfect for Spring! It’s lightly sweet with a zesty lemon flavor, and bursting with blueberries in every bite. You can turn this into a classic lemon loaf by leaving out the blueberries. The lemony sugar icing on top is such a good addition!

2. Carrot Cake Muffins

These gluten-free Carrot Cake Muffins are the perfect little treat to keep around! They’re light & fluffy, and topped with a delicious dairy-free cream cheese icing. Bonus points that they’re made with veggies, right?

The muffins are so easy to make, and pack in so much flavor. You guys are going to love them!

3. Feta & Veggie Frittata

Frittatas are such a nourishing way to pack in protein and veggies. This feta & veggie frittata is the perfect meal! It comes together in less than 30 minutes, and is a great way to clean out your fridge from any veggie scraps at the end of the week.

4. Spelt Flour Carrot Cake

Spelt flour carrot cake is here to satisfy all your carrot cake cravings! It’s made with spelt flour, sweetened with coconut sugar + maple syrup, and is the only healthy carrot cake recipe you need this holiday!

I’m all about indulging in real treats, but if you’re looking for a dairy-free version of Reese’s peanut butter eggs, this recipe is so delicious and easy to make! They have the perfect taste and texture, and are just like the real deal. A rich peanut butter filling that’s coated in dark chocolate and topped with sprinkle of sea salt- it doesn’t get much better than that.

7. Grain-free Blueberry Pancakes

The fluffiest stack of blueberry pancakes is here to make your weekend breakfast dreams comes true! They’re bursting with blueberries in every bite, and made from a grain-free flour blend of almond, tapioca and coconut flour.

If you’re not a fan of blueberries, just swap them for your favorite chocolate chips.

one thing about me is I will always have a colorful pasta salad in the fridge during the warmer months— it’s the perfect way to pack in carbs, fiber and protein for a quick & nourishing lunch
 
this one combines @kensdressings Simply Vinaigrette Lemon Dressing & Ken’s Simply Vinaigrette Greek Dressing for the ultimate flavor combo— fresh, zesty & full of herbs!

Recipe:
1 lb pasta, I used rigatoni
2 small zucchini, cut into rounds then quarters
1 cup roasted corn, I use pre-roasted frozen corn, thawed.
1 can (15 oz) cannellini beans, drained
1 red bell pepper or 1 cup mini peppers, sliced
4 oz feta cheese, crumbled
⅓ cup green olives, chopped. I used castelvetrano
2-3 cups arugula
Ken’s Simply Vinaigrette Lemon Dressing
Ken’s Simply Vinaigrette Greek Dressing
Salt & pepper
 
1. Prepare the pasta as instructed on the package. Drain and set aside
2. Preheat the oven to 425 F. Add the quartered zucchini to a baking dish and toss with 2 tbsp of Ken’s Simply Lemon Vinaigrette with a pinch of salt. Bake or air-fry for about 25 minutes on the top rack
3. Once the zucchini is ready, add it to a large mixing bowl with the cooked pasta, roasted corn, white beans, feta cheese, olives, sliced peppers, and arugula.
4. In a small bowl, combine ¼ cup of the Ken’s Simply Vinaigrette Lemon + ¼ cup of the Ken’s Simply Vinaigrette Greek. Mix well and toss with the pasta. Season with salt & pepper as needed
5. Leftovers can be refrigerated for up to 4 days.
