    lemon garlic smashed potatoes 🍋 the simplest s lemon garlic smashed potatoes 🍋

the simplest side dish with maximum flavor- using @kensdressings Tuscan Italian dressing to marinate the potatoes for a delicious zesty kick 

Ingredients:
24 oz baby yellow potatoes 
1/4 cup @kensdressings Tuscan Italian
Salt & pepper
Top with:
Shredded cheddar cheese
Greek yogurt
Chives

1. Boil the potatoes in a pot of salted water for 15 minutes, until fork tender
2. Preheat the oven to 400 F
3. Toss the baby potatoes with the dressing  and salt & pepper. Transfer them to a sheet-pan and smash down using the bottom of a glass or mug
4. Bake for 30 minutes on the top rack; then flip and bake for another 10 minutes
5. Add the shredded cheese and place under the broiler for 1-2 minutes to melt
6. Top with greek yogurt, chives and extra dressing
