Mediterranean Salmon Sheet-pan

The one-pan salmon sheet pan is one I could eat on repeat for dinner. With minimal clean up and maximum flavor, it’s a well-rounded dinner that the whole family will love.

Potatoes, peppers, zucchini and onion get tossed in olive oil and a few spices then roasted until crisp. The salmon gets topped with a zesty marinade, then finished off on the sheet-pan with the veggies.

I top everything off with fresh lemon juice, marinated mixed olives and cubed feta cheese. It’s an all-in-one meal that’s full of heart healthy fats, protein, carbs and veggies.

What you’ll need to make Sheet Pan Salmon

For the veggies
  • Bell peppers- sliced into strips
  • Yellow potatoes- cut into wedges
  • Red onion- roughly chopped
  • Zucchini- sliced into coins
  • Olive oil
  • Fresh parsley
  • Spices: paprika, garlic powder, salt & pepper
For the salmon
  • Salmon- about 1.5 lbs of salmon, with or without skin
  • Olive oil
  • Lemon juice + lemon slices to top
  • Spices: paprika, garlic powder, black pepper, oregano, cayenne pepper, salt
  • Fresh parsley

  1. Preheat the oven to 400 F
  2. Toss the veggies with the spices, herbs and olive oil and roast on 400 F for 30-35 minutes
  3. Prepare the marinade in a small bowl
  4. Remove the sheet pan and add the salmon to the center. Pour the marinade over the salmon with a few lemon slices on top, and finish baking for another 18 minutes
  5. Once done, garnish with fresh rosemary or thyme, feta cheese and marinated olives

I love the combination of veggies and spices used, but this dish is so customizable and versatile. You can use any veggies you have lying around, and substitute any type of fish you prefer.

The veggies are packed with flavor, and the salmon flakes right off the fork and melts in your mouth. This recipe is easy enough to make during the week, and definitely a crowd pleaser for your next gathering!

Ingredients

Roasted Veggies

  • 2 yellow potatoes cut into wedges

  • 1/4 cup olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper
  • Handful fresh parsley chopped

Salmon

  • 1.5 lbs salmon
  • 2 tbsp olive oil
  • 2 lemons
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dry oregano
  • 1/4 tsp cayenne pepper
  • Handful fresh parsley chopped
  • Fresh rosemary to top
  • 1/3 cup marinated olives
  • 4 oz feta cheese cubed

Directions

  1. Preheat the oven to 400 F
  2. Toss the chopped veggies with the olive oil, paprika, salt, pepper, garlic powder and parsley and mix well.
  3. Layer on a large parchment lined sheet-pan and bake for 30-35 minutes, flipping halfway through.
  4. In the meantime, prepare the salmon marinade in a small bowl. Combine the olive oil, spices, juice from 1 lemon and chopped parsley.
  5. After 30-35 minutes, remove the veggies and toss again. Make room in the center of the pan and place the salmon filet onto the sheet pan.
  6. Pour the marinade over the salmon, topped with a few lemon slices on top.
  7. Finish baking for another 18 minutes. Optional: broil for the last 2 minutes.
  8. Once ready, top with an extra squeeze of lemon juice, the olives, cubed feta cheese and fresh herbs.

This is so delicious! I make this often for my family. Only shift is I end up cooking the salmon a little bit longer because I like a well done fish. Thanks for the wonderful recipe!
