Crispy Cheese Breakfast Burritos

These crispy cheese breakfast burritos are a fun and delicious breakfast or lunch to serve with salsa, sour cream or yogurt and hot sauce. Scrambled eggs, crispy hash browns and avocado are rolled into a burrito, then grilled onto a crispy jalapeno cheese coating for a delicious, savory breakfast combination.

I’ve made this recipe at least 3 times in the past week and it never gets old. The combination of soft scrambled eggs, crunchy baked hash brown and crispy mozzarella cheese works so well together.

This recipe could even double as meal prep and reheated in the oven or air-fryer throughout the week!

Crispy Cheese Breakfast Burritos

What you’ll need to make crispy cheese breakfast burritos

This recipe truly cannot be easier to make, and can be customized using your favorite breakfast burrito fillings. Here’s what you’ll need:

  • Flour tortillas– use a medium or large sized tortilla for this recipe
  • Eggs– simply scrambled with a pinch of salt
  • Avocado– seasoned with salt & pepper
  • Frozen hash browns– I buy mine from Trader Joes
  • Jalapeno– the jalapeno adds a nice kick, though its completely optional
  • Shredded mozzarella cheese– for the crispy cheese layer
Crispy Cheese Breakfast Burritos
  1. Start by cooking the hash browns as instructed on the package. I like to air-fry mine on 400 F for 10 minutes, or bake on 400 F for 12-15 minutes.
  2. While the hash browns bake, scramble the eggs in your pan
  3. Assemble the burritos by placing a layer of avocado, scrambled eggs and hash brown in the center of your tortilla. Fold the centers in, then fold the bottom over and roll
  4. Prepare the crispy cheese layer by adding a layer of sliced jalapenos to a greased pan and letting them cook for 1-2 minutes. Then, sprinkle a layer of cheese right on top of the peppers. The cheese will take about 1-2 minutes to brown, so watch it carefully
  5. Once the edges of the cheese begin to brown, place the burritos open side down right onto the cheese, then flip the burritos over the brown the other side for another couple of minutes

I love to pair these with hot sauce, salsa and greek yogurt for added protein.

Double the recipe for meal prep

The written recipe serves 2, but can easily be doubled for more people or as a meal prep for the week. If preparing them ahead of time, here are some suggestions for storing and reheating:

  • Refrigerate the burritos individually wrapped in foil or parchment paper, or directly into an air right container for up to 4 days
  • To warm, bake on 350 F for 10 minutes until heated through, or air-fry on 350 F for 8 minutes

Ingredients

  • 2 flour tortillas
  • 4 eggs scrambled
  • 2 frozen hashbrowns
  • 1/2 avocado sliced
  • 1/2 jalapeno pepper
  • 1/3 cup shredded mozzarella cheese
  • Salt
  • Cooking spray

Serve with

  • Salsa
  • Greek yogurt or sour cream

Directions

  1. Prepare the hash browns as instructed on the package. I like to air-fry mine on 400 F for 10 minutes, or bake them on 400 F for 12-15 minutes.
  2. Heat a medium non-stick skillet on medium heat then spray with a little cooking spray.
  3. Whisk the eggs with a pinch of salt, then pour the eggs into the pan. Lower the flame to medium/low and let cook for 2 minutes. Using a rubber spatula, push the edges of the egss in towards the center and gently scramble the eggs in the pan. Let cook for 4-5 minutes, until cooked through.
  4. Prepare your burritos by adding a layer of avocado slices to the center of two tortillas, followed by the scrambled eggs and hash brown on top. Fold the sides of the tortilla over the center, then folder the bottom over and roll upwards. Set aside.
  5. Slice the jalapeno into thin rounds. Heat the pan on medium heat with a little more cooking spray if needed, then place 3-4 pieces of jalapenos in two horizontal lines- one for each burrito.
  6. Let the peppers cook on medium heat for 2 minutes, then top the jalapenos with the shredded cheese. Raise the heat to medium/high to let the cheese brown- this will take about 1-2 minutes.
  7. Once the cheese starts to brown, place the burritos directly onto the cheese- make sure to place them open side down to help seal them- then immediately flip them to crisp the other side for 2 minutes.
  8. Serve warm with your favorite sides
