Breakfast Board

If you guys have been following me on Instagram, you’ll know that I absolutely love snack boards of any kind. They’re the perfect meal to throw together when you’re indecisive. Plus, they’re a great way to pack in tons of different nutrients!

This delicious breakfast board truly has it all. It’s packed with protein, fiber, fats, and has the perfect combination of sweet and savory.

National Nutrition Month

March is National Nutrition Month, which is an annual campaign created by the Academy of Nutrition and Dietetics. Its focus is to emphasize the importance of making healthy food choices and living a balanced lifestyle.  

I do my best to promote an all-foods fit approach on my social channels, because that’s exactly what I believe in. And while I do believe there’s room for all foods in our diets, I also enjoy cooking and baking from scratch using feel-good ingredients, like Florida Orange Juice. 

Enjoying a glass of Florida OJ every day is a healthy habit that supports your body with essential nutrients and helpful benefits. I like to pair a serving of OJ  with other nutrients such as fiber and protein that can help create a balanced meal, like in this breakfast board.

Why Florida Orange Juice?

An 8-ounce serving of  Florida OJ is a good source of folate, potassium, and thiamin, which can all help support a healthy immune system. An 8-ounce glass also provides you with more than the recommended daily intake for vitamin C, and can be a great way to get calcium and vitamin D (in fortified Florida OJ) into your diet to help with immune health, and support bone health.

100% orange juice can help boost your water intake because it’s over 90% water. It can also help support hydration because it naturally contains several electrolytes, including potassium, calcium (in fortified juices), and magnesium in smaller amounts, to aid in fluid balance.

Build your breakfast board

Whenever I make any type of food board, the main thing I look out for is variety, especially within the nutrients. Here’s what you’ll need to build this delicious breakfast board:

  • Florida Orange Juice
  • Scrambled eggs, or your choice of eggs
  • Hashbrowns
  • Blueberry yogurt pancakes
  • Avocado
  • Fresh berries
  • Warm brie with hot honey
  • Fig jam
  • Cheese
  • Cucumbers, or any veggies you like
  • Whole grain bread

Breakfast Board with Florida OJ

Ingredients

Blueberry Pancakes

  • 1/2 cup oat flour
  • 1/2 cup plain or vanilla Greek yogurt
  • 1 egg
  • 1 tbsp pure maple syrup, plus more to top
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 2 tbsp fresh lemon juice
  • ½ cup blueberries
  • Butter or cooking oil, to grease the pan

Breakfast Board

  • Florida Orange Juice
  • Scrambled eggs
  • Hashbrowns- I buy them frozen and air fry them for 8-10 minutes on 375 F
  • Avocado
  • Fresh berries and veggies of choice
  • Warm brie with honey
  • Fig jam
  • Cheese of choice

Directions

  1. For the pancakes, heat a large skillet on medium heat.
  2. In a medium bowl, whisk together the yogurt, egg, lemon juice/zest, maple syrup, and vanilla.
  3. Fold in the oat flour, blueberries, baking powder and baking soda.
  4. Grease your pan with cooking spray and lower heat to low/medium.
  5. Pour 2-3 tbsp of batter into the pan and cook for about 1 minute on one side, and 30 seconds on the other side. Cook 2-3 pancakes at a time depending on the size of your pan.
  6. Assemble your board, pair it with a delicious glass of Florida Orange Juice and enjoy!
