Peanut butter energy bites are a quick and delicious snack to stock your freezer with, made with just a few simple feel-good ingredients.

Peanut Butter Energy Bites

The easiest peanut butter energy bites are here for all your snacking needs. I’ve been making these for years and they’re truly a staple in our house.

They’re made with a few pantry ingredients that you most likely have on hand, like rolled oats, peanut butter, maple syrup and chocolate chips.

I love these energy bites because they’re a great make-ahead recipe to keep on hand. There are so many variations to them, like these almond butter energy bites, that you can customize them each time you prep them.

These bites are the ultimate healthy snack or post dinner sweet fix.

Ingredients you’ll need to make peanut butter energy bites

  • Old fashion oats, aka rolled oats, for the base of the bites
  • Natural peanut butter– mine has just peanuts and salt, with no added sugar
  • Pure maple syrup or any other liquid sweetener for some natural sweetness
  • Roasted peanuts for an added crunch
  • Dark or semi-sweet chocolate chips
  • Other fun add-ins you can play around with: chia seeds, flax seeds, shredded coconut, vanilla extract and/or cinnamon

  1. Whisk together the maple syrup and peanut butter until smooth
  2. Fold in the oats, salt, chocolate chips and peanuts with a couple of tablespoons of water to form a sticky batter
  3. Using wet hands, scoop about 1 tbsp of the mix and roll into bites. Place them onto a parchment lined tray
  4. Freeze to harden and enjoy!

It’s as simple as that!

They have the perfect balance of sweet and salty, and an added crunch from the peanuts.

Ingredients

  • 1 1/2 cups rolled oats
  • 1/2 cup natural peanut butter, unsweetened
  • 1/4 cup pure maple syrup
  • 1/4 cup roughly chopped peanuts
  • 1/3 cup dark chocolate chips
  • 1/4 tsp salt
  • 3-4 tbsp water, as needed
  • Optional: 1/4 tsp cinnamon

Directions

  1. In a large bowl or food processor, whisk together the peanut butter and maple syrup until smooth. Add in the rolled oats, peanuts, salt, chocolate chips, 2 tbsp of water and cinnamon if using, and pulse or whisk together to form a sticky batter.
  2. Scoop out one tablespoon worth of dough and roll into balls using wet hands. Repeat with remaining batter.
  3. Layer the energy bites onto a parchment lined plate or tray and freeze for 30 minutes until firm.
  4. Keep stored in a ziplock or airtight container in the freezer for up to 3 months.

this one combines @kensdressings Simply Vinaigrette Lemon Dressing & Ken’s Simply Vinaigrette Greek Dressing for the ultimate flavor combo— fresh, zesty & full of herbs!

Recipe:
1 lb pasta, I used rigatoni
2 small zucchini, cut into rounds then quarters
1 cup roasted corn, I use pre-roasted frozen corn, thawed.
1 can (15 oz) cannellini beans, drained
1 red bell pepper or 1 cup mini peppers, sliced
4 oz feta cheese, crumbled
⅓ cup green olives, chopped. I used castelvetrano
2-3 cups arugula
Ken’s Simply Vinaigrette Lemon Dressing
Ken’s Simply Vinaigrette Greek Dressing
Salt & pepper
 
1. Prepare the pasta as instructed on the package. Drain and set aside
2. Preheat the oven to 425 F. Add the quartered zucchini to a baking dish and toss with 2 tbsp of Ken’s Simply Lemon Vinaigrette with a pinch of salt. Bake or air-fry for about 25 minutes on the top rack
3. Once the zucchini is ready, add it to a large mixing bowl with the cooked pasta, roasted corn, white beans, feta cheese, olives, sliced peppers, and arugula.
4. In a small bowl, combine ¼ cup of the Ken’s Simply Vinaigrette Lemon + ¼ cup of the Ken’s Simply Vinaigrette Greek. Mix well and toss with the pasta. Season with salt & pepper as needed
5. Leftovers can be refrigerated for up to 4 days.
