This roasted lemon branzino with tomatoes and olives is simple, bright, flavorful, and perfect for a weeknight meal or an easy dinner with friends.

The branzino roasts with olive oil, lemon juice, tomatoes on the vine and olives and is simply seasoned with salt & pepper. The cherry tomatoes burst in the oven, while the Castelvetrano olives add a salty, briny bite. Top if off with plenty of fresh lemon to bring everything together, and a drizzle of olive oil and fresh herbs to finish it off.

Ingredients

  • 3-4 branzino fillets I used skinless
  • 2 vines of cherry tomatoes
  • 1/4 cup pitted green olives, or sub kalamata olives
  • Juice from 1/2 a lemon plus lemon slices to garnish
  • 1/4 cup olive oil
  • 2 cloves minced garlic
  • Salt & pepper
  • Fresh parsley to top

Directions

  1. Preheat the oven to 425 F
  2. Place the fish into a baking dish. Season generously with salt & black pepper.
  3. Drizzle with the olive oil and lemon juice, then top with the garlic, chopped parsley, tomatoes, olives and lemon slices
  4. Bake for 12 minutes, then broil for 2 minutes at the end. Top with extra lemon juice when serving
