Roasted Lemon Branzino with Olives
Ingredients
- 3-4 branzino fillets I used skinless
- 2 vines of cherry tomatoes
- 1/4 cup pitted green olives, or sub kalamata olives
- Juice from 1/2 a lemon plus lemon slices to garnish
- 1/4 cup olive oil
- 2 cloves minced garlic
- Salt & pepper
- Fresh parsley to top
Directions
- Preheat the oven to 425 F
- Place the fish into a baking dish. Season generously with salt & black pepper.
- Drizzle with the olive oil and lemon juice, then top with the garlic, chopped parsley, tomatoes, olives and lemon slices
- Bake for 12 minutes, then broil for 2 minutes at the end. Top with extra lemon juice when serving
