Roasted Balsamic Salmon

If you’re looking for a dinner that feels elegant but comes together with minimal effort, roasted balsamic salmon is one you’ll want to keep on repeat. Tender, flaky salmon is coated in a sweet and tangy balsamic glaze that caramelizes beautifully in the oven, creating a rich flavor that’s balanced with just the right amount of sweetness.

It’s baked with tomatoes on the vine and lemon slices, then garnished with fresh oregano for a pop of color. I love to serve this over an herby orzo with a fresh side salad.

The balsamic glaze is made with pantry staples and transforms into a flavorful coating as the salmon roasts. A touch of garlic and dijon add depth, while the date syrup balances the acidity of the balsamic vinegar.

Ingredients In Balsamic Salmon

This recipe uses simple ingredients that come together to create an elevated dinner recipe. Here’s what you’ll need-

  • Salmon fillets: about 4-5 pieces, 4 oz each
  • Balsamic glaze: the homemade balsamic sauce is made from balsamic vinegar, date syrup, dijon mustard, garlic, olive oil and salt & pepper
  • Seasonings: salt, pepper plus fresh oregano to top
  • Cherry tomatoes on the vine as garnish
  1. Start by preparing your marinade by combining the ingredients together in a bowl or jar, then mixing well
  2. Season the salmon with salt & pepper. Add them to a baking dish and nestle a few lemon slices in between
  3. Pour the sauce over the salmon, then add the tomatoes on top
  4. Bake on 400 F for about 18 minutes, then set under the broiler for 2-3 minutes at the end
  5. Spoon the sauce over the salmon and garnish with fresh oregano

Ingredients

  • 4-5 salmon fillets about 4 oz each
  • 2 vines of cherry tomatoes
  • 3 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 2 tbsp date syrup or substitute honey or maple syrup
  • 1 tsp dijon mustard
  • 2 cloves garlic minced
  • Salt & pepper
  • Lemon slices
  • Fresh oregano, to garnish

Directions

  1. Preheat the oven to 400 F
  2. Add the salmon fillets to a baking dish. Season generously with salt & pepper.
  3. In a small bowl or jar, combine the balsamic vinegar, garlic, date syrup, dijon mustard and olive oil. Mix well.
  4. Pour the marinade over the salmon fillets. Add the tomato vines into the dish, and nestly a few pieces of lemon slices between the salmon
  5. Bake for about 18-20 minutes. Set the salmon under the broiler at the end for 2-3 minutes to brown. Garnish with fresh oregano when done

Simple sandwiches are a go-to of mine during busy weeks, and this grilled honey mustard chicken sandwich is the perfect way to pack in carbs, fiber and protein for a nourishing lunch. 

I used @kensdressing creamy Honey Mustard Dressing for the marinade, which is sweet, tangy, and incredibly versatile— it’s a pantry staple and a delicious way to elevate your proteins as we transition into fall!

Recipe:
Sesame baguette or bread of choice 
2 chicken breast
¼ cup Ken’s Honey Mustard dressing
1 red bell pepper, sliced 
1 zucchini, cut into coins 
Mixed greens
Olive oil
Salt & pepper

1. Add the sliced bell pepper and zucchini to a sheet pan and drizzle with olive oil and a pinch of salt. Set the vegetables under the broiler until they’re charred, for about 5-6 minutes- keeping a close eye
2. Heat a grill pan with 2 tbsp of olive oil on medium heat 
3. Marinate the chicken breast with the honey mustard dressing, a drizzle of olive oil and salt & pepper. Toss to combine
4. Grill the chicken for about 15 minutes total, flipping every couple of minutes until fully cooked through to 165 F 
5. Assemble your sandwich by toasting your bread and adding the mixed greens, grilled chicken, extra honey mustard dressing and the roasted vegetables
