Ingredients

salmon fillets
about 4 oz each
▢
2
vines of cherry tomatoes
▢
3
tbsp
balsamic vinegar
▢

tbsp
olive oil
▢
2
tbsp
date syrup
or substitute honey or maple syrup
▢
1
tsp
dijon mustard
▢
2
cloves
garlic
minced

Salt & pepper

Lemon slices

Fresh oregano, to garnish
Directions
Preheat the oven to 400 F
Add the salmon fillets to a baking dish. Season generously with salt & pepper.
In a small bowl or jar, combine the balsamic vinegar, garlic, date syrup, dijon mustard and olive oil. Mix well.
Pour the marinade over the salmon fillets. Add the tomato vines into the dish, and nestly a few pieces of lemon slices between the salmon
Bake for about 18-20 minutes. Set the salmon under the broiler at the end for 2-3 minutes to brown. Garnish with fresh oregano when done
