This lemon burrata pasta is fresh, creamy, and comes together with just a handful of simple ingredients. Made with pasta, fresh basil, roasted zucchini and creamy burrata, it’s perfect for busy weeknights or slow summer evenings.

Tender zucchini is baked until golden, then tossed with your favorite pasta, bright lemon, chili flakes, and olive oil. The finishing touch is a ball of creamy burrata creating a silky sauce, and a drizzle of hot honey for a touch of sweetness.

Ingredient’s you’ll need for lemon burrata pasta

  • Pasta of choice
  • Zucchini
  • Olive oil
  • Lemon (juice and zest)
  • Burrata
  • Fresh basil
  • Salt and black pepper
  • Garlic
  • Crushed red pepper flakes
  1. Roast or air-fry the zucchini with olive oil, salt & pepper
  2. Cook the pasta as instructed on package
  3. Combine the pasta with the zucchini and chopped basil. Toss in the lemon olive oil dressing and mix in the creamy part of the burrata (stracciatella)
  4. Top the pasta with the remaining burrata, a drizzle of olive oil and hot honey (optional)

Ingredients

  • 1 lb pasta of choice
  • 2 zucchini
  • 1/2 cup fresh basil chopped
  • 2 tbsp olive oil
  • Salt & pepper
  • Spicy honey, to top (optional)

Lemon Basil Dressing

  • 1/4 cup olive oil
  • Juice from 1/2 lemon
  • 2 tsp lemon zest
  • 1 ball of burrata
  • 2 cloves garlic, minced or grated
  • 1/4 tsp red pepper flakes
  • Salt & pepper, to taste

Directions

  1. Preheat the oven to 400 F
  2. Slice the zucchini into coins and then in half. Toss with 2 tbsp of olive oil, salt & pepper. Place onto a baking sheet and bake on the top rack for about 30-35 minutes until browned.
  3. Cook the pasta as instructed on the package. Drain and set aside.
  4. To prepare the dressing, mix together the olive oil, lemon juice and zest, garlic, lemon zest, chili flakes and salt & pepper.
  5. Add the pasta to a bowl with the cooked zucchini and chopped basil. Pull apart the burrata ball and add the creamy part into the pasta. Reserve the outer mozzarella for the end.
  6. Pour the dressing over the pasta and toss well to combine. Taste and adjust salt as needed.
  7. Top with the remaining burrata, a drizzle of olive oil and a drizzle of honey (spicy or regular). Serve warm, cold or at room temperature.

I really liked the flavors, but I made this using a half pound of pasta on accident, instead of 1 lbs. The ratios were perfect for 8oz pasta, not 16oz. I don’t know how it’d work with a full pound of pasta. But, great! I added peas!

Simple sandwiches are a go-to of mine during busy weeks, and this grilled honey mustard chicken sandwich is the perfect way to pack in carbs, fiber and protein for a nourishing lunch. 

I used @kensdressing creamy Honey Mustard Dressing for the marinade, which is sweet, tangy, and incredibly versatile— it’s a pantry staple and a delicious way to elevate your proteins as we transition into fall!

Recipe:
Sesame baguette or bread of choice 
2 chicken breast
¼ cup Ken’s Honey Mustard dressing
1 red bell pepper, sliced 
1 zucchini, cut into coins 
Mixed greens
Olive oil
Salt & pepper

1. Add the sliced bell pepper and zucchini to a sheet pan and drizzle with olive oil and a pinch of salt. Set the vegetables under the broiler until they’re charred, for about 5-6 minutes- keeping a close eye
2. Heat a grill pan with 2 tbsp of olive oil on medium heat 
3. Marinate the chicken breast with the honey mustard dressing, a drizzle of olive oil and salt & pepper. Toss to combine
4. Grill the chicken for about 15 minutes total, flipping every couple of minutes until fully cooked through to 165 F 
5. Assemble your sandwich by toasting your bread and adding the mixed greens, grilled chicken, extra honey mustard dressing and the roasted vegetables
