Gluten-free apple walnut loaf is the perfect snacking bread for your midday sweet tooth. It’s fluffy and moist, and filled with chunks of walnuts in every bite.

Gluten-free Apple Walnut Loaf

This delicious apple walnut loaf is going to be on repeat all season. Its made from a blend of oat flour and almond flour, which gives this loaf the perfect fluffy texture.

It’s filled with all the delicious apple cinnamon flavor, and is lightly sweetened with coconut sugar and applesauce.

I have a few variations of apple cake on my blog, like my upside down apple cake and apple crumb cake. This version is lightly sweet, and makes for the perfect snacking bread throughout the day.

How to make apple walnut loaf  

My favorite apples to bake with are honeycrisp. They’re a little pricier than other varieties, but they’re the absolute best. This recipe uses 1/2 cup of grated apple. You can grate your apple using a box grater (I like to keep the skin on), or slice your apple then pulse it in a food processor for 30 seconds until its finely grated.

Whisk together the wet ingredients 

  • grated apple
  • eggs
  • applesauce
  • coconut sugar
  • oil
  • vanilla extract

Add in the dry ingredients

  • almond flour
  • oat flour
  • cinnamon
  • baking powder
  • baking soda
  • salt
  • walnuts

Combine everything together, pour it into your loaf pan, then top it with thinly shaved apple slices.

This loaf is so easy to whip up, and packs in all of the delicious fall flavors. It’s the perfect treat to make whether you’re gluten-free or not. You guys are going to love it!

Ingredients

  • 1 cup oat flour
  • 1/2 cup almond flour
  • 2 eggs
  • 1/2 cup applesauce
  • 1/2 cup grated apple, about 1 medium apple
  • 1/2 cup coconut sugar
  • 1/4 cup liquid oil, like light olive oil or vegetable oil
  • 1 tsp vanilla extract
  • 1 1/2 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts
  • Thinly cut apple slices to top

Directions

  1. Preheat the oven to 350 F
  2. Add the eggs, applesauce, grated apple, coconut sugar, oil, vanilla and cinnamon to a large bowl and whisk together until smooth.
  3. Add in the almond flour, oat flour, baking soda, baking powder and salt and mix well until evenly incorporated.
  4. Fold in most of the walnuts, reserving some to top.
  5. Line a 9 x 5 loaf pan with parchment paper and pour the batter into the pan. Top the loaf with about 5-6 pieces of thinly shaved apples slightly overlapping at the tops – I use a vegetable peeler to shave off thin slices. Sprinkle on the remaining walnuts pieces.
  6. Bake the loaf for about 40-45 minutes on the middle rack, until a toothpick comes out clean. Let cool for 10-15 minutes, then slice and enjoy.
  7. Keep at room temperature for up to 3 days, or refrigerate for up to 1 week.

Hi there! Would the recipe work if I substituted oil with an additional 1/4 cup of applesauce or 1 mashed banana?
