Date Syrup Roasted Carrots

Simple side dishes are my favorite way to elevate weeknight dinners. Since I always have a bag of carrots sitting around, these date syrup roasted carrots came together in just minutes and were so delicious served with my Paprika Chicken and Potatoes.

The carrots are sliced then tossed in olive oil, date syrup and a simple spice blend. They’re roasted until tender and served with an extra drizzle of date syrup, for good measure.

Simple side dishes

Over the last couple of years I’ve been sharing tons of simple side dishes to serve during weeknights, holidays and dinner parties. They’re my absolute favorite recipes to create since veggies are so versatile, and are always the easiest way to change up your usual dinner routines. This one was a hit at our Passover table, and is going to be a weekly staple.

How to make date syrup roasted carrots

This recipe comes together with just a few simple ingredients. Here’s what you’ll need:

  • 2 lbs carrots, peeled and sliced into 2″ pieces- I like to slice them diagonally
  • Olive oil
  • Date syrup- aka Silan. You can find this at your local kosher grocery store, larger groceries in the syrup aisle, or on amazon
  • Spice blend: paprika, salt, za’atar, black pepper
  1. Preheat the oven to 425 F
  2. Toss the sliced carrots with olive oil, date syrup and spices
  3. Roast for 35-40 minutes
  4. Optional: Plate with your favorite cheese, pomegranate seeds, drizzle of date syrup, and/or chopped herbs

Serve these with a big salmon fillet, grilled chicken, lentil salad, or you favorite main dish. It’s recipe is easily one of my top side dishes to date, and I can’t wait for you all to try it!

Ingredients

  • 2 lbs carrots
  • 1/4 cup olive oil
  • 2 tbsp silan
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp za'atar
  • 1/2 tsp black pepper

Directions

  1. Preheat the oven to 425 F
  2. Peel the carrots and cut them on a diagonal into 2″ pieces
  3. Add them to sheet pan and toss with the olive oil, date syrup and seasonings.
  4. Bake for 35-40 minutes, flipping halfway through.
  5. Top with a light drizzle of date syrup before serving.
