Honey roasted carrots with walnuts and pistachios is an easy dish dish to add to your dinner rotation. It’s sweet and savory, and a delicious way to eat more veggies.

Simple side dishes are my favorite way to elevate any meal. With so many vegetable options out there, I’m always testing out new recipes to add to my dinner rotation. These colorful honey roasted carrots are such an easy, yet flavorful, side dish to add to your meals.

The carrots are tossed in olive oil and honey and seasoned with salt, pepper, Italian seasoning and garlic powder. They’re baked until tender then topped with a sweet & crunchy honey nut topping.

I love to serve this dish over ricotta or homemade whipped feta dip. The sweetness from the ricotta spread adds the perfect flavor balance to the dish.

Serve it as a side dish for weeknight dinners or dinner parties. This dish pairs so well with baked salmon or your favorite protein.

What you’ll need to make honey roasted carrots

Simple recipes call for simple ingredients. Here’s what you’ll need:

  • 1 lb of carrots. I used petite colored carrots (from Trader Joe’s), but this recipe can be made with regular orange or rainbow carrots for a pop of color
  • Olive oil– to roast the carrots
  • Honey for a touch of sweetness
  • Seasoning– salt, pepper, garlic powder and Italian seasoning
  • Sweet & crunchy nut topping made with chopped walnuts, pistachios, honey, cinnamon and cayenne pepper
  1. Toss the carrots with olive oil, honey and the spices
  2. Bake the carrots for 30-40 minutes on 400 F
  3. While the carrots bake, chop the nuts and toss them with the honey, cinnamon, cayenne pepper and pinch of salt
  4. Plate the roasted carrots over ricotta and top with the honey nut topping. I love to garnish the dish with microgreens for a pop of green

Serve this side dish with a baked salmon fillet, grilled chicken, lentil burgers, or you favorite main dish! It’s truly so easy to make and loaded with flavor.

Ingredients

  • 1 lb petite colored carrots, or 1 lb regular/rainbow carrots
  • 2 tbsp olive oil
  • 1 tsp honey
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Honey Nut Topping

  • 1/3 cup mixed walnuts and pistachios
  • 1 tbsp honey
  • 1/4 tsp cinnamon
  • 1/4 tsp cayenne pepper, optional
  • Pinch salt

Serve with

  • Whipped Feta

Directions

  1. Preheat the oven to 400 F
  2. Add the carrots to a sheet pan. If using petite carrots, leave whole. If using regular sized carrots, cut in half. Toss the carrots with the olive oil, honey and spices.
  3. Bake for about 30-40 minutes, until tender, flipping halfway through baking.
  4. While the carrots bake, finely chop the walnuts and pistachios and add them to a small bowl with the honey, cinnamon, cayenne and pinch of salt. Mix well to combine
  5. Once the carrots are ready, plate over ricotta cheese and top with the honey nut mixture.
