- Start by preparing the cinnamon apples. Melt butter in a skillet and add the diced apples and cinnamon. Cook until the apples become tender and lightly browned, for about 10 minutes.
- For the French toast, cut the bread into thick sticks. In a shallow bowl, whisk together the eggs, milk, vanilla and cinnamon.
- Dip each bread stick into the egg mixture, making sure it’s coated on all sides without soaking it for too long.
- Heat butter in a large skillet over medium heat with extra butter or coconut oil. Add the French toast sticks and cook, turning occasionally, until golden brown on all sides.
- Serve the warm French toast sticks topped with the cinnamon apples. Drizzle generously with maple syrup and a few spoonfuls of vanilla greek yogurt

Apple Cinnamon French Toast Sticks
Ingredients
- 4-6 slices thick bread like challah or brioche, cut into strips
- 1 cup milk I used oat milk
- 2 eggs
- ½ tsp cinnamon
- ½ tsp vanilla extract
- 2 tbsp coconut oil or butter
Cinnamon Apples
- 1 apple of choice chopped
- 1 tbsp coconut oil or butter
- 1/4 tsp cinnamon
Top with
- Maple syrup
- Vanilla yogurt
Directions
- Heat a skillet with the coconut oil or butter on medium heat. Add the chopped apples with 1/4 tsp of cinnamon and saute the apple for about 10 minutes until soft, stirring occasionally.
- Prep the french toast batter by whisking together the milk, eggs, cinnamon and vanilla extract
- Remove the apples from the pan and set them aside. Add some butter or coconut oil into the pan and heat on medium heat.
- Dip each piece of bread in the batter and soak for 30 seconds, flipping to coat all sides. Cook on a medium flame for about 2 minutes per side to brown. Repeat with remaining bread and batter.
- Serve the french toast sticks with the sauteed apples, maple syrup and yogurt
