If you’re looking for a dessert to really WOW your friends and family, I got you covered! This super easy vegan chocolate pudding parfait is the recipe for you.

Layers of 2-ingredient chocolate pudding topped with dairy-free whipped cream and fresh berries. It’s rich and decadent, but takes almost no effort to make!

I originally intended on creating a chocolate truffle recipe using chocolate chips and coconut milk. My ratio of chocolate to coconut milk was a little bit off, and I ended up with a creamier pudding instead.

While I 100% intend on retesting the truffles, I am not at all mad with how these turned out! This chocolate pudding tastes so delicious as is, but obviously tastes even better with a little whipped cream and fresh strawberries.

It gives it a nice fancy feel, especially with the extra shaved chocolate on top.

Some tips for making the best 2-ingredient chocolate pudding

Use full-fat coconut milk

This recipe will not yield the same results with a lighter coconut milk. Some brands I’ve used before and love are Good & Gather from Target, Native Forest, Whole Foods 365 brand, or Trader Joe’s organic coconut milk.

Use chocolate chips that are around 60-70% cocoa content

I love the rich, dark taste of a higher % cocoa content chocolate. Staying around 60-65% still gives you enough sweetness without needing to add additional sugar.

Prep the pudding the night before

If you plan to serve this dessert to friends or family, you can easily prepare the pudding the night before. The parfait’s will come together in just 5 minutes the following day. I suggest layering the parfait right before serving for best results!

This dessert is such a crowd pleaser, and also happens to be kosher for Passover- which believe it or not, is just a month away!

Ingredients

  • 1 cup vegan chocolate chips, I love this brand
  • 1 tsp coconut oil
  • 1 cup creamy coconut milk- the top creamy part of a full-fat can of coconut milk
  • Chopped strawberries
  • Dairy-free whipped cream
  • Shaved chocolate, optional

Directions

  1. Melt your chocolate chips in a bowl with 1 tsp of coconut oil in 30 second increments in the microwave.
  2. Once smooth, whisk in your creamy coconut milk. Chill the mixture for at least 3 hours, until its thick and creamy. You can also prep this in advance and leave refrigerated overnight.
  3. Once the pudding forms, layer it in a glass with dairy-free whipped cream and chopped berries. Top it with shaved dark chocolate.
  4. The parfaits are best when made right before serving, otherwise the whipped cream will thin out and the berries will release liquid.
  5. The pudding will stay fresh in the fridge for 4-5 days.
