Peanut Butter Crunch Bars

Homemade chocolate bars are one of my favorite treats to keep around, especially when they’re made with minimal ingredients.

These delicious crunch bars are a fun spin off of traditional crunch bars, but with a peanut butter twist. They’re made with chocolate chips, natural peanut butter, crispy rice cereal and crushed peanuts.

These bars are plant-based and gluten-free, and have been the perfect midday pick me up.

I love to sprinkle a little sea salt over the top for that ultimate sweet & salty flavor.

What you’ll need to make homemade crunch bars

These crunch bars come together so easily with just a handful of ingredients. Here’s what you’ll need:

Crispy rice cereal- the cereal adds the perfect texture to these bars with a delicious crunch.

Creamy peanut butter-  I always opt for one with no added sugar, and made with roasted peanuts

Chocolate chips- I love to opt for 70% cocoa content when choosing chocolate chips, or semi-sweet for a slightly sweeter flavor

Roasted peanuts- for an added crunch

Coconut Oil- to help melt the chocolate chips

Sea Salt– flakey sea salt is a must on all things chocolate

These bars are seriously so easy to make, and taste store-bought. They’ll stay fresh in the freezer for up to 2 months. I can’t wait for you guys to try them!

Ingredients

  • 2 cups rice crispy cereal, I used brown rice crisps
  • 1/3 cup natural peanut butter
  • 1/2 cup chocolate chips, I used semi-sweet
  • 1/4 cup chopped peanuts
  • 1 tbsp coconut oil
  • Sea salt, to top

Directions

  1. Melt the chocolate chips with the coconut oil in 30 second increments in the microwave until smooth, for about 90 seconds total
  2. Pour the melted chocolate into a large bowl and add in the peanut butter. Stir the chocolate and peanut butter together with a whisk until smooth
  3. Add in the rice crispy cereal and chopped peanuts. Toss together until evenly incorporated
  4. Transfer the mixture into a parchment lined 8 x 8 or 9 x 9 dish. Flatten it into the pan using a rubber spatula or back of a spoon
  5. Freeze for at least 1 hour to harden. Remove from freezer and cut twice down and five times across to make 18 bars. Top with flakey sea salt if desired
  6. Keep stored in an air tight container or ziplock bag in the freezer for up to 2 months
