Chickpea Salad

Chickpea salads are one of my go-to quick and easy lunches to meal prep for the week. They’re made from mashed chickpeas, crunchy veggies, and a few simple seasonings.

Instead of using mayo in my traditional recipe, I added tahini in this one for a delicious, nutty flavor.

These mediterranean inspired wraps are full of plant-based protein, and taste delicious in a wrap, sandwich, or served with your favorite crackers.

I filled my wraps with a homemade tahini sauce, some harissa for added spice, lettuce, the chickpea mixture and feta cheese. These wraps can easily be made gluten-free by substituting your favorite gluten-free wrap, and can be made vegan by using a plant-based feta cheese.

What you’ll need to make Mediterranean Chickpea Salad

This chickpea salad is so easy to make. You’ll need just a few simple ingredients:

  • canned chickpeas
  • tahini (sesame paste)
  • fresh lemon juice
  • celery
  • red onion
  • parsley
  • black pepper, salt and cumin

Start by mashing the chickpeas in a bowl then adding in the chopped veggies, spices and flavorings. Mix it all together and enjoy it all week long!

This recipe is seriously such a favorite of mine and has been on repeat all month! I can’t wait for you all to try it.

Ingredients

Mediterranean Chickpea Salad

  • 1 can chickpeas, drained (15 oz)
  • 2 tbsp tahini
  • Juice from 1/2 lemon
  • 1 stick of celery, finely chopped
  • 1/4 red onion, finely chopped
  • 1 tbsp chopped fresh parsley
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1/4 tsp cumin

Wrap Fillings

  • 4 whole wheat wrap
  • Tahini sauce
  • Harissa or hot sauce
  • Shredded lettuce
  • Feta cheese

Tahini Sauce

  • 1/4 cup tahini (sesame paste)
  • 1/4 -1/3 cup cold water
  • 1 -2 tbsp lemon juice
  • 1 tsp garlic powder
  • 1/4 tsp salt

Directions

  1. Mash the chickpeas well in a bowl. It’s ok to leave some in pieces. Mix in the remaining ingredients and stir together until well combined
  2. Prepare the tahini sauce by whisking all of the ingredients together well. Start with 1/4 cup of water and add more as needed to create a smooth, thick sauce.
  3. Assemble your wraps by spreading harissa and tahini sauce in the center, then layer the lettuce, chickpea salad, and feta cheese. Roll tightly and enjoy!
  4. Store leftovers in the fridge for up to 4-5 days

Love this recipe! Just made it for the first time and it could not be easier or more delicious!! Added it to a salad for protein and it was great. Definitely recommend
