Hearts of Palm Salad

This delicious salad is truly one of the easiest side dishes to make. I used to make it all the time back when I was in college, and love customizing it from time to time.

It takes minutes to whip up and is packed with so many fresh flavors. You can serve it as a simple plant-based lunch, or top it with crumbled feta cheese or a grilled salmon fillet.

Hearts of palm has a mild, crunchy texture and is similar in taste to artichoke hearts. I personally love snacking on them whole, but enjoy them even more chopped in a salad.

The salad is made with canned hearts of palm, canned chickpeas, avocado, cucumbers, tomatoes, red onion and parsley. The textures work so well together and give this salad a delicious crunch even a few days after its prepared.

The dressing is a simple olive oil lemon juice mixture and adds the perfect zest to this salad.

Ingredients

  • 1 can hearts of palm, sliced (14 oz)

  • 1 can chickpeas, drained and rinsed (15 oz)

  • 1 avocado, diced

  • 1/4 red onion, chopped

  • 1 cup cherry tomatoes, chopped

  • 3 persian cucumbers, chopped

  • 2 tbsp chopped parsley

  • Dressing
  • Juice from 1 lemon

  • 2 -3 tbsp olive oil

  • Salt and pepper to taste

  • 1 clove of garlic, crushed

Directions

  • Add your chopped hearts of palm to a bowl with all of the veggies. I suggest choosing an avocado that’s slightly firm and not too soft!
  • Toss the salad together then mix in the olive oil, lemon juice, crushed garlic, salt and pepper. Adjust the salt to your liking and enjoy with your favorite protein. I love topping mine with crumbled feta cheese
  • Leftovers will stay fresh in the fridge for 3-4 days
