Simple weeknight dinner

Salmon is a weekly staple in our house. It’s packed with protein and healthy omega-3 fats, and can be prepared in endless ways. This smokey maple chipotle salmon recipe is simple to make, and packs in so much delicious flavor.

I served it with a side of brown rice, then turned the leftovers into the viral salmon rice bowl that’s floating around TikTok.

Maple Chipotle Sauce

The maple chipotle sauce is sweet, tangy, and the perfect marinade for nearly any protein. It’s made with just a few simple ingredients. Here’s what you’ll need-

  • chipotle peppers in adobo sauce– you can find this in most large grocery stores in the canned food section, or in the ethnic aisle. The peppers + the adobo sauce add the most delicious flavor. Plus the leftovers make the most delicious chipotle mayo!
  • pure maple syrup
  • lime juice
  • garlic
  • salt
  • smoked paprika
  • and a pinch of cinnamon for good measure

I love pairing this dish with roasted brussels sprouts, but you can swap any vegetable you prefer. Depending on the size and thickness of your salmon, this dish will be ready in just 30 minutes!

Ingredients

  • 1.5 lbs salmon

  • Salt

  • Garlic powder

  • Olive oil

  • Roasted Brussels Sprouts
  • 1 lb brussels sprouts

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • Maple Chipotle Sauce
  • 2 chipotle peppers in adobo sauce, finely chopped

  • 1 tbsp adobo sauce

  • 2 tbsp maple syrup

  • 1 tbsp lime juice

  • 1 clove garlic

  • 1/4 tsp salt

  • 1/4 tsp smoked paprika

  • 1/8 tsp cinnamon

  • Fresh parsley, to top

Directions

  • Preheat the oven to 375 F
  • Pat the salmon dry and season it lightly with salt and garlic powder.
  • Prepare the maple chipotle sauce by whisking together all of the ingredients together in a bowl (except for the parsley). I chopped my chipotle peppers very fine, but you can blend everything together as well for a smoother sauce.
  • Brush half of the marinade over your salmon and let it sit while you prepare the brussels sprouts.
  • Trim the ends off of your brussels sprouts and slice them in half. Layer them on a large sheet pan layered with parchment paper. Toss them in the olive oil, salt, pepper and garlic powder.
  • Bake the brussels sprouts for 12 minutes then remove them from the oven and give them a toss.
  • Add the salmon to the center of your baking sheet with the brussels sprouts, and drizzle the salmon with olive oil.
  • Bake everything for an additional 18 minutes or until cooked through, then broil for 2-3 minutes. Once done, pour the remaining sauce over the salmon.
  • Serve with your choice of rice and enjoy!
