Roasted cauliflower with harissa date sauce is a delicious side dish to serve to your family and friends. Topped with chopped dates and herbs for the perfect balance of flavors. 

Harissa Date Roasted Cauliflower

This deliciously spiced roasted cauliflower is made using some of my favorite spices. It’s topped with a simple harissa date syrup sauce and garnished with chopped dates, dill, and parsley.

It’s light and flavorful and pairs well with any meal!

Roasting the cauliflower brings out its flavor. It stays tender on the inside but still gets a nice crisp. The blend of spices like paprika, cumin and turmeric add the most delicious flavor.

The harissa date sauce is sweet and slightly spicy, and can be the perfect sauce to use on any vegetables or proteins.

What you’ll need to make this simple side dish

  • Cauliflower
  • Good quality extra virgin olive oil
  • Homemade spice blend- paprika, garlic, cumin, turmeric, salt & pepper
  • Harissa- harissa is a Tunisian hot chili pepper paste that can be used for various recipes. You can buy a mild or spicy variety depending on where you shop, and use it in marinades for your fish, tofu or even vegetables
  • Date syrup, aka Silan- you can swap honey if you can’t find date syrup near you
  • Medjool dates
  • Fresh herbs like parsley and dill

How to make Harissa Date Roasted Cauliflower

  1. Start by cutting the cauliflower into florets and tossing them with olive oil, paprika, garlic powder, cumin, turmeric and salt & pepper
  2. Roast the cauliflower for about 45 minutes, flipping it halfway through
  3. Prepare the harissa date sauce by blending harissa, date syrup and a little olive oil
  4. Pour the harissa date sauce over the roasted cauliflower and top with chopped medjool dates, parsley and dill

This recipe comes together so easily, and will elevate your weeknight meal. I can’t wait for you guys to try it!

Ingredients

  • 1 large head of cauliflower
  • 1/4 cup olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp cumin
  • 1/4 tsp turmeric
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Harissa Date Sauce

  • 2 tbsp date syrup (silan)
  • 1 tbsp harissa
  • 1/2 tbsp olive oil

Top with

  • 2 -3 medjool dates, chopped
  • Handful fresh parsley, chopped
  • 1 -2 tbsp fresh dill, chopped

Directions

  1. Preheat the oven to 400 F
  2. Trim the cauliflower stem and cut it into small florets. Add it to a large sheet pan.
  3. Drizzle the olive oil over the cauliflower along with all of the spices, then toss together until evenly combined.
  4. Bake the cauliflower for about 25 minutes, remove the pan from the oven, give the cauliflower a toss and bake for another 20-25 minutes.
  5. While that bakes, prepare the harissa date sauce by blending the date syrup, harissa and olive oil together in a small blender or using an immersion blender until smooth. You can also whisk by hand, but I prefer a smoother sauce.
  6. Once the cauliflower is ready, transfer it to your serving platter and drizzle the sauce over the top.
  7. Garnish with chopped dates, parsley and dill.

this one combines @kensdressings Simply Vinaigrette Lemon Dressing & Ken’s Simply Vinaigrette Greek Dressing for the ultimate flavor combo— fresh, zesty & full of herbs!

Recipe:
1 lb pasta, I used rigatoni
2 small zucchini, cut into rounds then quarters
1 cup roasted corn, I use pre-roasted frozen corn, thawed.
1 can (15 oz) cannellini beans, drained
1 red bell pepper or 1 cup mini peppers, sliced
4 oz feta cheese, crumbled
⅓ cup green olives, chopped. I used castelvetrano
2-3 cups arugula
Ken’s Simply Vinaigrette Lemon Dressing
Ken’s Simply Vinaigrette Greek Dressing
Salt & pepper
 
1. Prepare the pasta as instructed on the package. Drain and set aside
2. Preheat the oven to 425 F. Add the quartered zucchini to a baking dish and toss with 2 tbsp of Ken’s Simply Lemon Vinaigrette with a pinch of salt. Bake or air-fry for about 25 minutes on the top rack
3. Once the zucchini is ready, add it to a large mixing bowl with the cooked pasta, roasted corn, white beans, feta cheese, olives, sliced peppers, and arugula.
4. In a small bowl, combine ¼ cup of the Ken’s Simply Vinaigrette Lemon + ¼ cup of the Ken’s Simply Vinaigrette Greek. Mix well and toss with the pasta. Season with salt & pepper as needed
5. Leftovers can be refrigerated for up to 4 days.
