Gluten-free Apple Date Cake

This delicious gluten-free apple date honey cake is the perfect dessert to make for any occasion. It’s fluffy and moist, and filled with warm apple cinnamon flavor. Sweetened with honey and applesauce, and topped with chewy pieces of medjool dates and toasted sliced almonds.

It’s the perfect small sized cake that can be made in an 8″ round pan, or 9 by 5 loaf pan. Its made from a blend of oat flour and almond flour, which gives this dessert the perfect fluffy texture.

I added grated apple and applesauce for the ultimate apple flavor, and sweetened the cake with honey for added richness. This recipe is truly the perfect dessert for Rosh Hashana!

I have a few variations of apple cake on my blog, like my upside down apple cake and apple crumb cake. This version is lightly sweetened, and makes for the perfect snacking cake throughout the day.

How to make gluten-free apple date honey cake

  • grated apple- measured 1/2 cup before the liquid is squeezed out

Ingredients

  • 1 cup oat flour
  • 1/2 cup almond flour
  • 2 eggs
  • 1/2 cup applesauce
  • 1/2 cup grated apple 1 medium apple
  • 1/2 cup honey
  • 1/4 cup coconut oil. Use refined oil for a neutral taste
  • 1 tsp vanilla extra
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 2 medjool dates finely chopped
  • 2 tbsp sliced almonds

Directions

  1. Preheat the oven to 350 F
  2. Squeeze the liquid out of the grated apple, then add it to a large bowl with the eggs, oil, applesauce, honey, vanilla and cinnamon.
  3. Add in the oat flour, almond flour and baking powder and whisk until smooth.
  4. Grease an 8" baking pan and pour the batter into the pan. If your round pans are larger than 8", I suggest baking this in a 5"x9" loaf pan for best results.
  5. Top with the chopped dates and almonds. Bake for 30 minutes until the top if firm to touch.
  6. Serve warm or at room temperature.
