During the summer I’m all about light and simple meals. I crave fresh salads during the heat, but also love to change it up with roasted veggies.

I usually browse the aisles of Trader Joes and grab what looks good that week, and had a bag of frozen artichokes waiting to be used in my freezer for the longest time!

This dish turned out to be one of my favorites, and pairs well with just about anything.

The lemony parmesan flavor in these artichokes is so delicious. But the best part about this recipes is that it’s made from frozen artichokes! You simply thaw them, toss them in olive oil + seasoning, and air-fry until crispy.

Serve them as an appetizer with your favorite dip, or as a side dish with your favorite protein. They’re a nutrient-dense side dish, and happen to be a great source of fiber!

How to make air-fried artichokes

This recipe is made with just 6 simple ingredients, and turns into the most flavorful, crispy bites! Here’s what you’ll need:

  • frozen artichoke hearts, thawed
  • olive oil
  • lemon juice
  • garlic
  • grated parmesan
  • salt & pepper

I’ve only tested this recipe in my air fryer, but roasting these in the oven is also an option. I suggest roasting them on a cooling rack over a sheet pan so that they get the ultimate crispy texture.

Ingredients

  • 12 oz frozen artichokes, thawed
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, crushed
  • 2 tbsp grated parmesan, plus more to top
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Directions

  1. Thaw your artichoke hearts and squeeze out any excess liquid.
  2. Toss them in a bowl with the olive oil, lemon juice, garlic, parmesan and spices until they’re evenly coated
  3. Spray your air-fryer rack with cooking spray and transfer the artichokes to the rack
  4. Air fry on 425 F for 15 minutes.
  5. If roasting in the oven, roast on 425 F for 25-30 minutes, until crisp. You can roast them on a parchment lined baking sheet, or on a cool rack placed over a baking sheet.
  6. Top with extra parmesan and enjoy!
