Strawberry Orzo Salad
If you’re not a huge fan of fruit in your dishes, this strawberry orzo salad may change you! The flavors just scream summer, and are definitely a crowd please.
The strawberries add the perfect sweetness, while balancing out the saltiness of the feta cheese. I served this dish last week with a piece of broiled salmon, and it was the most delicious dinner for a hot summer night.

The best part about this recipe is that it gets better over time. You can enjoy it cold or at room temperature, and prepare it 3-4 days in advance. It’s an easy meal prep to keep in the fridge, and can be served in so many different ways.
It’s gluten-free friendly, and can be made vegan by swapping your favorite plant-based feta cheese. You guys are going to love this recipe- it’s going to be on repeat all summer!
Can you use something other than Kale? I don’t like it. lol
Definitely! My top recommendations would be spinach or arugula
Although strawberries are sweet, they taste delicious in savory dishes. This strawberry orzo salad looks absolutely delicious!
