This strawberry orzo salad is a summer staple! A delicious side dish filled with fresh chunks of strawberries, feta cheese, and crunchy slivered almonds. This salad is fresh, flavorful, and perfect with your favorite grilled protein!

Strawberry Orzo Salad

If you’re not a huge fan of fruit in your dishes, this strawberry orzo salad may change you! The flavors just scream summer, and are definitely a crowd please.

The strawberries add the perfect sweetness, while balancing out the saltiness of the feta cheese. I served this dish last week with a piece of broiled salmon, and it was the most delicious dinner for a hot summer night.

Ingredients you’ll need for this orzo salad

For the orzo salad:

  • orzo pasta– you can use regular orzo, or swap your favorite gluten-free kind!
  • olive oil
  • water or vegetable broth
  • strawberries 
  • kale 
  • red onion 
  • crumbled feta or goat cheese
  • slivered almonds

For the vinaigrette dressing:

  • olive oil
  • lemon juice
  • red wine vinegar
  • dijon mustard
  • Salt and pepper

These few simple ingredients leave your with the most flavorful dish!

The best part about this recipe is that it gets better over time. You can enjoy it cold or at room temperature, and prepare it 3-4 days in advance. It’s an easy meal prep to keep in the fridge, and can be served in so many different ways.

It’s gluten-free friendly, and can be made vegan by swapping your favorite plant-based feta cheese. You guys are going to love this recipe- it’s going to be on repeat all summer!
