The fish is coated in a lemony parmesan gluten-free crumb mixture, and baked to perfection. Crispy outside, buttery inside, and so easy to whip up!

You guys already know i’m all about the hassle-free recipes, especially during the week. We’ve been getting pretty tired of salmon as our main fish, so I couldn’t resist when I saw some buttery sole at the fish market.

I love anything crusted, so I blended my own breadcrumbs using grain free crackers that I had in my pantry. I tossed the crumbs with a little lemon zest and grated parmesan, and the combination was incredible.

The fish itself cooks in under 15 minutes, which is why I love this recipe. It so flavorful, and pairs well with just about anything.

What you’ll need to make gluten-free crusted fish:

  • White fish- I used sole in this recipe because it has a subtle, flakey texture. You can use any white fish you prefer!
  • Breadcrumbs- any crumbs (regular, whole wheat or gluten-free), or panko would work. If you have none, blend up your favorite GF crackers to make some!
  • Eggs
  • Grated parmesan- you can substitute nutritional yeast to keep this recipe dairy-free
  • Lemon zest
  • Olive oil
  • Salt & pepper

Sounds simple right?

You toss the fish in the whisked egg, then coat it in breadcrumbs and bake it until fully cooked! It would be delicious over a salad, with a side of roasted potatoes, or some roasted veggies.

Ingredients

  • 1 lb sole fillets, or any white fish of choice
  • 1 cup breadcrumbs, I blended a 4.2 oz container of grain-free crackers to make my crumbs
  • 1 large egg
  • 2-3 tbsp grated parmesan cheese
  • Zest from 1 lemon
  • Salt & pepper
  • Olive oil

Directions

  1. Preheat your oven to 375 F
  2. In a medium sized bowl, whisk the egg until fluffy
  3. Season your fish with salt and pepper, and toss them in the egg bowl to coat
  4. Pour your breadcrumbs into another bowl with the lemon zest and parmesan. One by one, dip each piece of fish to coat both sides in the crumbs
  5. Place the fish on a parchment lined baking sheet once its coated.
  6. Drizzle the fish with olive oil and bake for 10-12 minutes, until fully cooked through. If your fish is on the thicker side, bake closer to 15 minutes.
  7. Serve with fresh squeezed lemon and your choice of sides!

this one combines @kensdressings Simply Vinaigrette Lemon Dressing & Ken’s Simply Vinaigrette Greek Dressing for the ultimate flavor combo— fresh, zesty & full of herbs!

Recipe:
1 lb pasta, I used rigatoni
2 small zucchini, cut into rounds then quarters
1 cup roasted corn, I use pre-roasted frozen corn, thawed.
1 can (15 oz) cannellini beans, drained
1 red bell pepper or 1 cup mini peppers, sliced
4 oz feta cheese, crumbled
⅓ cup green olives, chopped. I used castelvetrano
2-3 cups arugula
Ken’s Simply Vinaigrette Lemon Dressing
Ken’s Simply Vinaigrette Greek Dressing
Salt & pepper
 
1. Prepare the pasta as instructed on the package. Drain and set aside
2. Preheat the oven to 425 F. Add the quartered zucchini to a baking dish and toss with 2 tbsp of Ken’s Simply Lemon Vinaigrette with a pinch of salt. Bake or air-fry for about 25 minutes on the top rack
3. Once the zucchini is ready, add it to a large mixing bowl with the cooked pasta, roasted corn, white beans, feta cheese, olives, sliced peppers, and arugula.
4. In a small bowl, combine ¼ cup of the Ken’s Simply Vinaigrette Lemon + ¼ cup of the Ken’s Simply Vinaigrette Greek. Mix well and toss with the pasta. Season with salt & pepper as needed
5. Leftovers can be refrigerated for up to 4 days.
