Yogurt pancakes have been a favorite of mine for SO long. The pancakes come out perfectly fluffy, and can be made as a small batch for a simple healthy breakfast.
Since my OG lemon yogurt pancakes are such a reader favorite, I knew it was time for another variation of them!

They’re made with vanilla yogurt, fresh orange zest, eggs, oat flour, a couple of other pantry staples, and filled with fresh chunks of strawberries. They taste delicious with a little fresh maple syrup or powdered sugar!
I love making the full batch of 15 pancakes and freezing half as a quick meal prep for busy mornings.

The batter is so quick to whip up, and the pancakes come out perfectly sweet with a hint of zest.
Ingredients you’ll need for these strawberry stuffed yogurt pancakes:
- Non-fat vanilla yogurt, or sub your favorite plain yogurt!
- Eggs
- Milk of choice, I love using almond milk
- Pure maple syrup
- Vanilla extract
- Orange zest
- Oat flour
- Baking powder
- Baking soda
- Freshly chopped strawberries
