Chipotle roasted sweet potatoes with sesame seeds are one of the best side dishes to pair with any meal during the week. Sweet potatoes are rich in vitamins and nutrients and can be prepared in endless ways.

These tri-color sweet potatoes are baked with chipotle powder, garlic powder and salt & pepper, then finished off with a drizzle of honey and some sesame seeds. I love serving them over yogurt or whipped feta with a drizzle of tahini sauce.

Sesame Chipotle Roasted Sweet Potatoes

This recipe is a great one to meal prep for a hearty carb to add to meals throughout the week. You can add these roasted sweet potatoes to salads, nourish bowls, or any work-week lunches.

What You’ll Need To Make Roasted Sweet Potatoes:

  • Sweet potatoes– I used orange, purple and white Japanese sweet potatoes for a fun color combination
  • Olive oil
  • Spices: chipotle powder, salt & pepper, garlic powder
  • Sesame seeds
  • Honey
  • Toppings: labneh or yogurt, whipped feta, tahini sauce
  1. Chop the sweet potatoes into 1″ rounds and add them to a large sheet pan
  2. Toss everything in the olive oil and spices
  3. Bake on 400 F for 30 minutes. Remove and flip the potatoes over, then drizzle with honey and sprinkle with sesame seeds
  4. Serve with an extra drizzle of honey, homemade whipped feta dip or yogurt, and a drizzle of tahini sauce

Amazing
I made this tonight with red kuri squash, as that’s what I had on hand, and it was amazing. Served with labneh and sadly forgot the tahini…crazy night but with the honey and sea salt it was still delish!
