Kale salads are a go-to salads no matter the season. They’re crunchy, versatile, and are hearty enough to be a satisfying meal.

This toasted sesame kale avocado salad is such a flavorful side dish to enjoy as a lunch or dinner. Serve it with a grilled piece of salmon or chicken for an added boost of protein. It’s crisp, savory, and comes together so easily.

Massaging the kale in the sesame tahini dressing helps break down its fibers, making it more easily digestible. I prefer massaging the kale with my hands to help soften it, but using salad tongs works great too!

What you’ll need to make kale avocado salad

  • tuscan kale, or any variety you prefer
  • thinly sliced red onion
  • avocado- when choosing an avocado for salads, I suggest using one that’s not too ripe so it holds its shape in the salad
  • tri-color sesame seeds, or regular toasted sesame seeds
  • sliced almonds
  • grape tomatoes

Everything gets tossed in a tahini sesame dressing made with tahini, toasted sesame oil, honey, and a few other basics. The crunchy nuts on top truly bring the flavors together and add the perfect crunch.

You can serve this with a side of my harissa sesame salmon patties or lemon pepper tofu for a vegan boost of protein.

Ingredients

  • 1 bunch tuscan kale, stem removed (about 6 cups shredded kale)
  • 2 avocado, sliced
  • 1/2 red onion, thinly sliced
  • 1 cup grape tomatoes, cut in half
  • 1/3 cup sliced almonds
  • 1/4 cup toasted or tricolor sesame seeds

Sesame Dressing

  • 3 tbsp tahini paste
  • 2 tsp sesame oil
  • 1 tbsp soy sauce or coconut aminos
  • 1 tsp honey
  • 1 tbsp rice vinegar
  • Pinch salt
  • 1 tbsp water

Directions

  1. Heat a small pan on medium heat and add the sliced almonds. Toast the almonds for about 2-3 minutes total until they begin to brown, tossing them every 30 seconds.
  2. Prepare the sesame dressing by whisking together all of the ingredients. Start with 1 tbsp of water and add an additional tbsp if needed if the dressing is too thick. Set aside.
  3. Chop the kale and add it to a large salad bowl with the sliced onions. Pour most of the dressing over the kale and onions and massage it into the kale using your hands or salad tongs.
  4. Top the salad with the avocado, tomatoes, sesame seeds and toasted almonds and pour the remaining dressing over the top.
  5. Mix together and serve with your favorite sides.
