Hosting a Gluten-free Meal- Passover Friendly Recipes

These naturally gluten-free recipes are the perfect recipes to transition into the spring season, and delicious for passover, easter, or weeknight meals.

Last month, at 9 months pregnant, I took it upon myself to curate a fully gluten-free menu to help plan ahead for Passover and my maternity leave. One thing I love more than cooking is putting together menus and bringing my recipe ideas to life through video and photos.

I created a menu that’s inspired by spring colors and flavors, all of which are Passover friendly, too- a holiday in which we stay away from wheat, rye and barley for 10 days.

These naturally gluten-free recipes would be a great addition to your easter brunch, weekday meals, or family gatherings. They’re made with tons of feel-good ingredients and fresh flavors, and are the perfect recipes to transition into the spring season.

Even though I won’t be hosting any meals this year, I put together all of the recipes throughout this post to give inspiration to anyone who will be hosting a holiday meal.

How to create the perfect menu

When putting together a menu, you want to have a few things in mind.

  1. Know your guests. Is there something for everyone to eat? Always aim for a variety of recipes. Ideally, you’ll want 1-2 mains dishes, at least 2 sides, and 1-2 desserts consisting of protein, veggies and a carb
  2. Are there any dietary restrictions within the group? This menu is fully gluten-free, but be sure to accommodate for anyone who’s dairy-free or vegan
  3. What can be made ahead of time? Time management and menu planning are key when hosting. Take advantage of anything that can be made a day in advance. For this menu, I prepped the desserts in advance, and all of the quinoa salad ingredients without the dressing + the pizza crusts. Some recipes can be partially prepped then finished off the day of hosting- this makes the world of a difference when you’re in a pinch

What’s on the menu?

Now for the fun part, the food. Here’s everything I cooked for this sample gluten-free menu. I tried to come up with recipes that are fun and different, but offer variety as well. Here’s everything that was on my passover friendly menu-

Gluten-free Mini Pizzas

These gluten-free mini pizzas come together so easily. They’re made with almond flour, tapioca flour, eggs and olive oil with a little salt and baking soda, and baked with jarred marinara sauce and shredded cheese.

Pistachio Herb Salmon

A beautiful main dish made of salmon cooked over colorful citrus, baked with a vibrant pistachio herb marinade.

Asparagus Quinoa Salad

A delicious spring quinoa salad with a zesty lemon vinaigrette, sauteed asparagus and thinly sliced radish. This light yet flavorful asparagus quinoa salad comes together so easily, and tastes delicious with baked fish.

Smashed Potato Crusted Quiche

A fun spin on the classic recipe, this smashed potato crusted quiche is so delicious. Made with a smashed potato crust and a broccoli cheddar filling.

Avocado Tuna Salad

Avocado Tuna Salad with Herb Vinaigrette

This salad platter consists of hard boiled eggs, avocado, canned tuna, microgreens, red onion and the most delicious herb vinaigrette on top. Serve it with matzah, rice cakes or toasted bread.

Brown Butter Walnut Cookie Skillet

This gluten-free brown butter walnut cookie skillet is the perfect sweet and nutty treat. It’s made from a blend of almond flour and tapioca flour, giving it the ideal crisp yet chewy texture. The star of the recipe is the browned butter, which offers a rich, nutty flavor to the cookie skillet.

Blood Orange Chocolate Pudding

This dairy-free blood orange chocolate pudding is a delicious no-bake dessert. Made with creamy coconut milk, chocolate chips and vibrant blood orange juice and zest, it’s a decadent dessert that takes minutes to make.

this one combines @kensdressings Simply Vinaigrette Lemon Dressing & Ken’s Simply Vinaigrette Greek Dressing for the ultimate flavor combo— fresh, zesty & full of herbs!

Recipe:
1 lb pasta, I used rigatoni
2 small zucchini, cut into rounds then quarters
1 cup roasted corn, I use pre-roasted frozen corn, thawed.
1 can (15 oz) cannellini beans, drained
1 red bell pepper or 1 cup mini peppers, sliced
4 oz feta cheese, crumbled
⅓ cup green olives, chopped. I used castelvetrano
2-3 cups arugula
Ken’s Simply Vinaigrette Lemon Dressing
Ken’s Simply Vinaigrette Greek Dressing
Salt & pepper
 
1. Prepare the pasta as instructed on the package. Drain and set aside
2. Preheat the oven to 425 F. Add the quartered zucchini to a baking dish and toss with 2 tbsp of Ken’s Simply Lemon Vinaigrette with a pinch of salt. Bake or air-fry for about 25 minutes on the top rack
3. Once the zucchini is ready, add it to a large mixing bowl with the cooked pasta, roasted corn, white beans, feta cheese, olives, sliced peppers, and arugula.
4. In a small bowl, combine ¼ cup of the Ken’s Simply Vinaigrette Lemon + ¼ cup of the Ken’s Simply Vinaigrette Greek. Mix well and toss with the pasta. Season with salt & pepper as needed
5. Leftovers can be refrigerated for up to 4 days.
