Green Goddess Dressing

This creamy green goddess dressing is so easy to prepare, and offers a delicious boost of nutrients to so many foods. It’s made from a blend of silken tofu, fresh herbs, lemon juice, olive oil, a bit of honey and salt & pepper.

Silken tofu has the perfect consistency for this dressing because of its creaminess and subtle flavor. It offers a boost of high-quality protein and essential nutrients to this versatile dipping sauce.

This recipe comes together in minutes and is so good with fresh summer rolls or grilled chicken or salmon.

How to serve your green goddess dressing

  • with tofu and veggie summer rolls
  • as a sauce over grilled salmon or chicken
  • in a salad with your favorite protein as a fresh and vibrant dressing

Ingredients you’ll need

  • Silken tofu- silken tofu is ideal for this recipe for its creamy consistency and subtle taste
  • Fresh herbs– I used a blend of parsley, cilantro, basil, mint and scallions
  • Fresh lemon juice
  • Olive oil
  • Honey
  • Salt & pepper

That’s it! Simple ingredients that pack in so much flavor. Blend everything together in a high-speed blender for a smooth and creamy sauce you can keep around in the fridge.

Storing leftovers

This dressing can be made in advance and refrigerated for up to 5 days. If it thickens in the fridge, first give it a mix or shake to loosen up. If it’s still too thick, add a tablespoon of water.

Ingredients

  • 1 block silken tofu, 16 oz
  • ⅓ cup parsley
  • ⅓ cup cilantro
  • ⅓ cup mint
  • ⅓ cup basil
  • 2 stalks of scallions
  • Juice from 1 ½ lemons
  • 2 -3 tbsp olive oil
  • 1 tsp honey (optional)
  • Pinch salt & pepper

Directions

  1. Add all of the ingredients to a blender and blend until smooth. Start with 2 tbsp of olive oil and add another if the dressing isn’t smooth. Adjust the salt as needed
  2. Serve as a dip with veggies, summer rolls, grilled protein or as a salad dressing
