The sauce is made with coconut milk, fresh spinach, basil, nutritional yeast, and a few other flavorings. It’s vegan friendly, and goes well with any pasta you enjoy.

Here’s what you’ll need:

  • Full-fat coconut milk
  • Nutritional yeast
  • Pesto, you can use regular or dairy-free
  • Fresh spinach and basil
  • Garlic
  • Olive oil
  • Lemon juice
  • Salt

My favorite pasta for this recipe is cavatappi, but you can substitute any gluten-free variety you enjoy.

Ingredients

  • 8 -10 oz of pasta, I used cavatappi

  • Green Goddess Sauce
  • 1 cup full-fat coconut milk

  • 1/3 cup nutritional yeast

  • 2 tbsp pesto, regular or dairy-free

  • 1 packed cup of spinach

  • 3 -4 fresh basil leaves

  • 2 cloves garlic

  • 2 tbsp olive oil

  • Juice from 1/2 a lemon

  • 1/2 tsp salt

Directions

  • Add the pasta to a pot of boiling salted water. Cook as instructed on package. Drain out the water and set aside, but don’t rinse the pasta
  • Blend all of the green goddess sauce ingredients in a blender until smooth.
  • Pour the sauce into the pot of pasta over a low flame and stir together until evenly mixed, for 1-2 minutes
  • Serve with extra nutritional yeast and fresh basil
