Green Goddess Pasta

If you’re looking for new ways to enjoy your pasta this summer, this creamy green goddess dressing is the recipe for you.

The sauce is made with coconut milk, fresh spinach, basil, nutritional yeast, and a few other flavorings. It’s vegan friendly, and goes well with any pasta you enjoy.

This dish is delicious on it’s own, but would pair well with grilled salmon, a fresh side salad, and some roasted vegetables. Serve it warm or cold for the perfect comfort meal!

How to make creamy green goddess dressing

The simple green goddess sauce is so delicious on your choice of pasta. It’s vegan friendly, and packed with so many flavors.

Here’s what you’ll need:

  • Full-fat coconut milk
  • Nutritional yeast
  • Pesto, you can use regular or dairy-free
  • Fresh spinach and basil
  • Garlic
  • Olive oil
  • Lemon juice
  • Salt

My favorite pasta for this recipe is cavatappi, but you can substitute any gluten-free variety you enjoy.

Ingredients

  • 8 -10 oz of pasta, I used cavatappi

Green Goddess Sauce

  • 1 cup full-fat coconut milk
  • 1/3 cup nutritional yeast
  • 2 tbsp pesto, regular or dairy-free
  • 1 packed cup of spinach
  • 3 -4 fresh basil leaves
  • 2 cloves garlic
  • 2 tbsp olive oil
  • Juice from 1/2 a lemon
  • 1/2 tsp salt

Directions

  1. Add the pasta to a pot of boiling salted water. Cook as instructed on package. Drain out the water and set aside, but don’t rinse the pasta
  2. Blend all of the green goddess sauce ingredients in a blender until smooth.
  3. Pour the sauce into the pot of pasta over a low flame and stir together until evenly mixed, for 1-2 minutes
  4. Serve with extra nutritional yeast and fresh basil
