Chocolate Chip Cookie Bars

When it comes to dessert, I like having something quick to grab when that craving hits. These cookies bars are a delicious sweet fix to keep around during the week, and can be filled with any fix-ins of your choice!

Cookie bars are basically chocolate chip cookies in bar form, but are so much easier to make, and don’t require chilling the dough before baking!

These cookie bars are made from a combination of oat and almond flour, AKA my favorite blend of gluten-free flours to bake with because of the chewy texture they provide.

These gluten-free chocolate chip cookie bars are a cross between a cookie and a blondie. They have the fudgiest center, with perfectly crisp edges.

I like topping mine with a little sea salt on top. They’re so easy to make, and highly addicting 🙂

What you’ll need to make these Chocolate Chip Cookie Bars

This recipe was based off of my classic chocolate chip cookie recipe, with just a few modifications. Here’s what you’ll need for this recipe:

  • Almond flour- fine almond flour is my go-to for baking, like this one
  • Oat flour- store-bought oat flour is ideal for its fine texture. If you don’t have any lying around, you can make your own by blending rolled oats in a blender until fine like flour
  • Egg
  • Coconut sugar
  • Vegan or regular butter- you can also use soft coconut oil for these!
  • Dark chocolate chips
  • Chocolate candies, or good old M & M’s! These are the candies I used for this recipe

If you’re looking for all that delicious cookie flavor, but want to switch things up from the classic cookie, this recipe is for you! Especially if you like a soft-baked cookie (but seriously, who doesn’t?!)

My husbands office absolutely loved these cookies! If you’re wondering, that’s where most of my baked goods end up when I recipe test 🙂

Ingredients

  • 1 1/2 cups almond flour
  • 1/2 cup oat flour
  • 1 egg
  • 1/2 cup coconut sugar
  • 1/3 cup softened butter, vegan or regular
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/3 cup chocolate chips
  • 1/2 cup chocolate candies, plus more to top
  • 1/2 tsp salt
  • Sea salt to top, optional

Directions

  1. Preheat your oven to 350 F
  2. Combine the egg, sugar, butter and vanilla in a bowl and whisk well for 1-2 minutes until smooth.
  3. Add in the almond flour, oat flour, baking soda and salt and mix together until a dough forms.
  4. Fold in the chocolate chips and chocolate candies.
  5. Line a medium baking dish (about 10″ by 7″) with parchment paper, and flatten the cookie mixture evenly. Top with a few extra pieces of chocolate candies.
  6. Bake for 18 minutes.
  7. Remove from oven, let cool and slice into squares.
  8. Keep stored in an airtight container for up to 1 week.
