Sweet potatoes are rich in vitamins and nutrients and can be prepared in so many ways. I love them roasted in the oven with a few simple seasonings, and they taste even better paired with a creamy whipped feta dip.

These chipotle sweet potato fries are so easy to make and are the perfect side dish to any meal.

What is whipped feta?

Whipped feta is a creamy dip make from blending together feta cheese, cream cheese, yogurt, and some flavorings. There are many ways to make this dip, but I love the combination of both cream cheese and yogurt to help keep this dip light.

You can serve whipped feta as a dip with these sweet potato fries, or as an appetizer served with warm bread and fresh veggies.

I love prepping a batch of these chipotle sweet potato fries for the week to snack on during the day, or add as a carb to my lunches and dinners.

The spice mixture is not overly spicy, especially since the sweet potatoes are naturally sweet. You can even use the spice rub on fish, chicken or tofu.

I’m all about simple recipes during weeknight meals, and this side dish is going to be on repeat all summer! I can’t wait for you guys to try it out.

NOTES: the whipped feta will typically harden in the fridge, so it’s best to prepare it when you’re ready to serve, or let it reach room temperature if prepared ahead of time

Ingredients

  • 2 large sweet potatoes

  • 1/4 cup olive oil

  • 1 tbsp chipotle chili powder, or regular chili powder

  • 1 tsp smoked paprika

  • 1 tsp garlic powder

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • Chopped parsley and chives, to garnish

  • Whipped Feta
  • 6 -8 oz feta cheese

  • 2 tbsp cream cheese

  • 2 tbsp greek yogurt

  • 1 clove garlic

  • 1 -2 tbsp olive oil, as needed to blend

  • 1 tsp lemon juice

  • Pinch salt, to taste

Directions

  • Preheat the oven to 400 F
  • Rinse your sweet potatoes well then slice them into 2″ thick strips
  • Add them to a large bowl and toss together with the olive oil and spices
  • Layer them on a large baking sheet with parchment paper, making sure they’re not overcrowding
  • Bake for 30 minutes. Remove the tray from the oven, flip the sweet potatoes and bake for another 35-40 minutes
  • While they bake, prepare the whipped feta dip by blending all of the ingredients together in a food processor until smooth. Start with 1 tbsp of oil and add more gradually if needed to blend. Lower fat feta cheese may require a little more oil
  • Once the potatoes are ready, plate the whipped feta in a small bowl or plate and garnish with fresh herbs and a drizzle of olive oil
