Feta Salmon Fritters: Crispy, Savory, and Perfectly Golden

There’s something so satisfying about a good fritter — crispy exterior with a tender and flavorful center. These feta salmon fritters are the perfect balance of flavors, made with flakey salmon, savory feta cheese and fresh herbs. They’re delicious with a side salad and your favorite dipping sauce, or served in a bun with all you go-to toppings.

I love them for an easy weeknight dinner, or a fun appetizer for holidays or dinner parties.

Fritters are one of those comfort foods that can be made in endless combinations. Often made using flaked cooked fish, I love using ground up for a softer center.

This version packs in protein and bold flavor, and the combination of salmon and feta hits all the right notes. The feta adds a tang that brightens the richness of the salmon, while the fresh herbs and lemon bring everything to life.

What You’ll Need

  • Skinless salmon, finely chopped or pureed in the food processor
  • Crumbled feta cheese
  • Eggs
  • Breadcrumbs or panko
  • Chopped parsley or red onion
  • Fresh herbs- dill and parsley
  • Lemon zest and juice
  • Dijon mustard
  • Salt, pepper, garlic powder and paprika
  • Olive oil for frying
  1. Grind the salmon in a food processor
  2. Add it to a bowl with the egg, breadcrumbs, spices, dijon, feta, herbs and lemon zest. Mix well to combine
  3. With oiled hands, shape the mix into small, palm-sized fritters. Dip each fritter into breadcrumbs to coat all sides
  4. Heat olive oil in a pan on medium heat. Cook for about 3-4 minutes on medium/high heat, until browned
  5. Serve with fresh lemon juice and your favorite dipping sauce

Serve these fritters warm with a dollop of yogurt, spicy mayo, tzatziki, or a simple garlic aioli. They’re fantastic as an appetizer, over a salad for lunch, or in a bun or pita for a quick sandwich.

A Few Tips

  • No fresh salmon? Canned or pre-baked salmon work well in this recipe
  • Make it your own: Add finely grated zucchini or carrots to the mix for extra veggies
  • Meal prep magic: They reheat perfectly in an air fryer or oven the next day

Ingredients

  • 1 lb skinless salmon
  • 4 oz crumbled feta cheese
  • 1/4 cup fresh parsley finely chopped
  • 1/4 cup dill finely chopped
  • 1/2 cup + 2 tbsp unseasoned breadcrumbs
  • 1 egg
  • 1/2 tbsp dijon mustard
  • 1 tsp lemon zest
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika
  • 1/4 cup olive oil

Directions

  1. Add the salmon to a food processor and pulse a few times to puree. You can leave a few small chunks for added texture if preferred.
  2. Transfer the salmon to a bowl with 2 tbsp of the breadcrumbs, the feta cheese, chopped herbs, seasoning, mustard, lemon zest and egg. Mix well.
  3. Oil your hands and shape the salmon mixture into 8 palm-sized patties, or about 10 slightly smaller ones.
  4. Pour the remaining 1/2 cup of breadcrumbs into a bowl. Dip each salmon fritter into the breadcrumbs to coat both sides.
  5. Heat a skillet on medium heat with about 1/4 cup of olive oil. Cook the fritters for 3-4 minutes per side on medium/high heat until browned.
  6. Serve warm with garlic aioli, spicy mayo or greek yogurt

Absolutely delicious!!
Made these tonight with coarsely chopped sockeye salmon I get at my local grocer. I didn’t process the salmon, as I like the pieces a bit chunkier. I used reg breadcrumbs in the mix but Panko to coat to pan-fry. I didn’t have parsley, so used all fresh dill & added some onion powder. 750g of salmon made 4 decent sized patties. I had 1 patty with a salad & it was more than satisfying. Thank you for another fabulous recipe!!
