Sumac Salmon Bites

These sumac salmon bites served over herby whipped feta are a show stopping dish. Packed with fresh flavors like lemon juice, parsley and dill, the zesty salmon pairs perfectly with a creamy feta dip.

It’s easy enough for a family dinner, yet looks impressive enough to serve your guests. This recipe is going to be on repeat all summer served with all the seasonal produce.

I tend to create so many of my recipes with dinner parties or holidays in mind. This weekend, we’ll be celebrating the Jewish holiday of Shavuot- a holiday that commemorates the giving of the Torah. It’s custom to eat dairy dishes during this holiday, so I figured what better way than with a delicious salmon dish and herb whipped feta.

Salmon Bites

Ingredients you’ll need for sumac salmon bites

  • Salmon- skinless and cubed
  • Spices: salt, pepper, garlic powder and sumac
  • Olive oil
  • Honey
  • Lemon juice
  • Herbs: parsley and dill

Toss the salmon cubes with the seasoning, oil and honey and transfer to a sheet-pan. Bake on a high temperature for about 10-12 minutes, until the salmon has browned.

Herb Whipped Feta

Whipped feta is one of my favorite ways to elevate a dish. Whether you serve it with a protein, veggie or as a spread, it packs in so much good flavor- especially when blended with fresh herbs.

This dip is made by blending feta cheese, yogurt, olive oil, lemon juice, and fresh herbs like parsley, cilantro and dill.

It pairs so well with the baked salmon, but can also be enjoyed on sandwiches or with roasted vegetables.

How to cook the salmon

To air-fry

Place the seasoned salmon cubes on your air-fryer rack or tray and air-fry on 400 F for 8-10 minutes

Baked salmon

Add the seasoned salmon to a sheet-pan and bake it on 425 F for 10-12 minutes. I suggest setting the fish under the broiler for the last 2 minutes to brown

Pan-fry

To make the salmon in a pan, heat a skillet on medium heat with a little olive oil. Pan-fry the salmon cubes for about 2 minutes per side, until browned.

Ingredients

  • 1 1/2 lbs skinless salmon
  • 1/4 cup olive oil
  • Juice from 1/2 a lemon about 2 tbsp
  • 1/4 cup fresh parsley chopped
  • 1 tbsp dill chopped
  • 1 tbsp honey
  • 1 tbsp sumac
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Herb Whipped Feta

  • 4 oz feta cheese
  • 2 tbsp Greek yogurt or substitute ricotta or cottage cheese
  • 2 tbsp olive oil
  • 1/2 cup mixed herbs- parsley, cilantro, and dill
  • Juice from 1/2 a lemon about 2 tbsp
  • Pinch of salt

Directions

  1. Preheat the oven to 425 F
  2. Cut the salmon into 1" cubes and add it to a bowl with the olive oil, lemon juice, spices, honey, parsley and dill. Toss together to combine
  3. Transfer the salmon to a sheet-pan. Bake for 10-12 minutes, then set under the broiler for 2 minutes to crisp.
  4. While the salmon bakes, prepare the whipped feta by adding the feta cheese, yogurt, lemon juice, herbs, olive oil and salt to a food processor or blender. Blend until smooth.
  5. To serve, spread the herb whipped feta onto a serving platter or plate and top with the salmon cubes. Garnish with a drizzle of honey, fresh parsley and lemon wedges.
  6. Leftover whipped feta can be refrigerated for up to 5 days and enjoyed with proteins, roasted veggies or on sandwiches.
