Baked chocolate oatmeal bars are the perfect addition to breakfast or snack time! They’re easy to make with minimal ingredients, and meal-prep friendly!

Chocolate Oatmeal Bars

Chocolate oatmeal bars are a delicious make-ahead snack or breakfast, made with just a few pantry staples. I love a good grab and go snack off the morning and these bars are so delicious and easy to whip up.

They’ve got whole-grains from the oats, hearty healthy fats from the almond butter, and are naturally sweetened with a little maple syrup. I love to prep a batch of these to have on hand for busy work days.

I’ve officially begun thinking of my postpartum freezer prep menu, and these bars are first on the list. I’m aiming for nourishing meals and snacks that are easy to grab or warm, and will fuel me through the early days of motherhood.

Ingredients you’ll need for chocolate oatmeal bars

These bars come together in just 10 minutes with a few pantry favorites. Here’s what you’ll need-

  • Rolled oats
  • Unsweeteened cocoa powder
  • Creamy almond butter
  • Milk of choice
  • Maple syrup
  • Vanilla extract
  • Egg
  • Chocolate chips
  • Baking powder
  1. Preheat the oven to 350 F
  2. Whisk together the wet ingredients- almond butter, egg, maple syrup, milk and vanilla
  3. Fold in the dry ingredients- rolled oats, cocoa powder, baking powder and chocolate chips
  4. Pour into an 8 x 8 baking dish and bake for about 20 minutes
  5. Let cool and slice into 8 bars

That’s it! Ready in just a few simple steps and hits the spot for something sweet and nourishing.

How to store your oatmeal bars

These bars can be stored at room temperature for up to 3 days. For longer storage, you can refrigerate them for up to a week, or freeze them for up to 3 months. To thaw, just stick them in the microwave for 45 seconds until warm.

They’re best when served warm, so I love to heat them before eating and serve them with a side of yogurt for extra protein.

These chocolate oatmeal bars truly cannot be easier to make, and are a delicious way to change up your snack game. You guys are going to love them!

Ingredients

  • 1 1/2 cups rolled oats
  • 1/2 cup cocoa powder
  • 1 cup milk of choice
  • 1/3 cup creamy almond butter
  • 1/3 cup pure maple syrup
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/3 cup chocolate chips

Directions

  1. Preheat the oven to 350 F
  2. In a bowl, whisk together the almond butter, milk, maple syrup, egg and vanilla extract until smooth.
  3. Add in the oats, cocoa powder, baking powder and chocolate chips. Stir together until evenly incorporated.
  4. Line an 8 x 8 baking tin with parchment paper and pour the batter into the pan. Top with a few extra chocolate chips.
  5. Bake for about 20 minutes, until the top is firm to touch. Let cool and slice into 8 bars- I like to sprinkle flakey salt on top.
  6. Keep stored in airtight container for up to 3 days, or refrigerate for up to a week. Serve warm for best texture.
