Chocolate Peanut Butter Oat Cups

These chocolate and peanut butter oat cups come together in just 20 minutes and are such a fun treat to keep around. They’re made with less than 10 ingredients that you likely have in your pantry, and are a delicious sweet and salty treat to end the night with.

They’re gluten-free, naturally vegan, and truly so easy to make!

These oat cups also pack in some omega-3 fats, protein and even fiber. They’re a nourishing treat to stock your fridge or freezer with. 

How to make chocolate peanut butter cups

Here’s what you’ll need to make this simple recipe:

  • rolled oats– oats are a rich source of fiber, protein and iron. They’re loaded with important vitamins and minerals, like phosphorous, magnesium, zinc and folate. I always have oats in my pantry for easy-to-make recipes
  • natural peanut butter, I love using a creamy peanut butter made with roasted peanuts, but no added sugar
  • pure maple syrup, to lightly sweeten the peanut butter mixture 
  • chia seeds– the chia seeds provide omega-3 fats, and help bind the mixture together
  • dairy-free chocolate chips
  • coconut oil, to help thin out the melted chocolate
  • salt & cinnamon, for added flavor
  1. Prepare the peanut butter oat base by combining the oats, peanut butter, maple syrup, chia seeds, salt and cinnamon
  2. Line a 12-count muffin tray with paper lines and flatten about 1 tbsp of the oat mixture into each cup
  3. Melt the chocolate chips with coconut oil, then mix in some peanut butter to create the peanut butter chocolate topping
  4. Top each cup with melted chocolate and flakey sea salt
  5. Freeze to set for about an hour, then keep stored in the freezer

Ingredients

  • 1 1/2 cups rolled oats
  • 1/2 cup unsweetened peanut butter
  • 1/4 cup maple syrup
  • 2 tbsp chia seeds
  • 1/4 tsp cinnamon
  • Pinch salt

Chocolate Coating

  • 3/4 cups dairy-free chocolate chips
  • 1 tbsp peanut butter
  • 1 tsp coconut oil
  • Flakey salt, to top

Directions

  1. In a large bowl whisk together the peanut butter and maple syrup until smooth. If your peanut butter isn’t runny, you can use an immersion blender or blender cup for this step.
  2. Add in the oats, chia seeds, salt and cinnamon and mix well.
  3. Line a 12-count muffin tray with paper liners and scoop about 2 tbsp of mixture into each cup. Flatten it down using the back of a spoon or your finger.
  4. Add the chocolate chips and coconut oil to a microwave safe bowl and microwave in 30-second increments until smooth. Once smooth, add in the peanut butter and mix well.
  5. Pour the chocolate over each oat cup.
  6. Top with flakey salt if desired and freeze for about an hour to set.
  7. Keep stored in the fridge for up to 2 weeks or freezer for up to 2 months.

this one combines @kensdressings Simply Vinaigrette Lemon Dressing & Ken’s Simply Vinaigrette Greek Dressing for the ultimate flavor combo— fresh, zesty & full of herbs!

Recipe:
1 lb pasta, I used rigatoni
2 small zucchini, cut into rounds then quarters
1 cup roasted corn, I use pre-roasted frozen corn, thawed.
1 can (15 oz) cannellini beans, drained
1 red bell pepper or 1 cup mini peppers, sliced
4 oz feta cheese, crumbled
⅓ cup green olives, chopped. I used castelvetrano
2-3 cups arugula
Ken’s Simply Vinaigrette Lemon Dressing
Ken’s Simply Vinaigrette Greek Dressing
Salt & pepper
 
1. Prepare the pasta as instructed on the package. Drain and set aside
2. Preheat the oven to 425 F. Add the quartered zucchini to a baking dish and toss with 2 tbsp of Ken’s Simply Lemon Vinaigrette with a pinch of salt. Bake or air-fry for about 25 minutes on the top rack
3. Once the zucchini is ready, add it to a large mixing bowl with the cooked pasta, roasted corn, white beans, feta cheese, olives, sliced peppers, and arugula.
4. In a small bowl, combine ¼ cup of the Ken’s Simply Vinaigrette Lemon + ¼ cup of the Ken’s Simply Vinaigrette Greek. Mix well and toss with the pasta. Season with salt & pepper as needed
5. Leftovers can be refrigerated for up to 4 days.
