Middle Eastern Rice with Noodles
Ingredients
- 1 1/2 cup jasmine rice
- 1 1/2 cups fine egg noodles or vermicelli noodles
- 1/4 cup olive oil
- 3 cups water
- 1 tsp salt plus more to taste
Directions
- Add the oil to a saucepan on medium heat.
- Once hot, add the noodles into the pan and toast for about 5 minutes, until lightly browned.
- Add the rice and salt and give it a mix.
- Pour in the water, cover the pan and bring it to a boil. Once boiling, reduce the heat to low and simmer for 20 minutes. If you want to add a little crispy to the noodles, leave the pan on low for an additional 15 minutes.
- Let rest for 5 minutes, fluff with a fork then adjust salt if needed.
