Lemon Pepper Chicken

Bright, juicy, and packed with fresh lemony flavor, this lemon pepper chicken is the kind of dinner you’ll want to make on repeat. Tender chicken thighs are seasoned with plenty of lemon flavor, black pepper, honey and a few simple spices, then pan-seared until golden brown.

It’s an incredibly easy dinner to make and serve over rice, pasta or with your favorite salad. You can make this using chicken breast or even tofu for a plant-based dinner the whole family will love!

This recipe comes together quickly with simple ingredients you probably already have in your kitchen. The chicken gets beautifully golden on the outside while staying tender and juicy inside. I especially love serving this with my Middle Eastern Rice with Noodles.

Ingredients you’ll need for lemon pepper chicken

  • Boneless, skinless chicken thighs or breast
  • Lemon juice and zest
  • Black pepper
  • Salt
  • Garlic powder
  • Olive oil
  • Honey
  • Parley

How to Make Lemon Pepper Chicken

  1. Start by cutting up the chicken thighs into 2″ pieces, then seasoning generously with lemon juice, lemon zest, honey and the seasonings.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until deeply golden on both sides and cooked through.
  3. Once the chicken is browned, garnish with fresh parsley and extra lemon zest before serving.

A Few Tips

Don’t skip the sear. Getting a good golden crust on the chicken adds tons of flavor.

Use fresh lemon juice. Bottled lemon juice just doesn’t have the same bright, fresh flavor.

Let the chicken rest. A few minutes of resting helps keep the chicken juicy when you slice into it.

Ingredients

  • 6-8 boneless chicken thighs
  • Handful of parsley, chopped
  • Juice from 1 lemon
  • 1 tbsp honey
  • 1/4 cup olive oil divided
  • 1 tsp garlic powder
  • 1 tsp lemon zest
  • 1/2 tsp black pepper
  • 1/2 tsp salt

Directions

  1. Cut the chicken thighs into 2″ pieces. Add them to a bowl with 2 tbsp of olive oil, the lemon juice, lemon zest, spices, honey and chopped parsey. Toss well to combine.
  2. Heat a skillet on medium heat with the remaining 2 tbsp of olive oil.
  3. Once hot, add the chicken and cook for about 15-20 minutes, tossing every couple of minutes until browned.
  4. Garnish with extra parsley and lemon zest when serving.

Simple sandwiches are a go-to of mine during busy weeks, and this grilled honey mustard chicken sandwich is the perfect way to pack in carbs, fiber and protein for a nourishing lunch. 

I used @kensdressing creamy Honey Mustard Dressing for the marinade, which is sweet, tangy, and incredibly versatile— it’s a pantry staple and a delicious way to elevate your proteins as we transition into fall!

Recipe:
Sesame baguette or bread of choice 
2 chicken breast
¼ cup Ken’s Honey Mustard dressing
1 red bell pepper, sliced 
1 zucchini, cut into coins 
Mixed greens
Olive oil
Salt & pepper

1. Add the sliced bell pepper and zucchini to a sheet pan and drizzle with olive oil and a pinch of salt. Set the vegetables under the broiler until they’re charred, for about 5-6 minutes- keeping a close eye
2. Heat a grill pan with 2 tbsp of olive oil on medium heat 
3. Marinate the chicken breast with the honey mustard dressing, a drizzle of olive oil and salt & pepper. Toss to combine
4. Grill the chicken for about 15 minutes total, flipping every couple of minutes until fully cooked through to 165 F 
5. Assemble your sandwich by toasting your bread and adding the mixed greens, grilled chicken, extra honey mustard dressing and the roasted vegetables
