Chocolate Chip Banana Mug Cake

Mug cakes have been my JAM these last few months, like this Birthday Cake mug cake or Vegan S’mores one. I love them because they take 5 minutes to whip up, but also because you don’t need to share your dessert- its a win win. My latest obsession is this chocolate chip banana mug cake recipe.

It’s basically a single-serve banana bread, and I can’t get enough! It has the softest texture, with chunks of walnuts and chocolate chips in every bite. It can even be doubled for you and a friend!

Chocolate Chip Banana Mug Cake

This chocolate chip banana mug cake will curb every sweet craving you have! You can prep it in the morning to start your day off with something sweet, or after dinner for the ultimate dessert. Serve it with vanilla ice cream if you’re feeling badass.

It’s made with some of my favorite baking staples like almond flour, spelt flour, coconut oil, maple syrup, vanilla extract, and chocolate chips– most of which can be found on my shop page if you’re running low!

Some common substitutions if you don’t have what the recipe calls for:

  • oat flour or all-purpose flour can be substituted for the spelt flour. I haven’t tested a substitute for almond flour, but you may be able to use all oat or all regular!
  • any other neutral tasting oil would work in place of coconut, like vegetable or avocado
  • any liquid sweetener would work in place of maple
Chocolate Chip Banana Mug Cake

A few things to keep in mind before prepping your chocolate chip banana mug cake

  1. All microwaves are different. Mine took a minute, and then an additional 30 seconds to cook through. Check yours after a minute, and then add 30 second intervals after that! It should be firm to the touch.
  2. You can omit the liquid sweetener if you wanted to cut down on the sugar! If your banana is spotty, it’ll likely be sweet enough- especially if you use chocolate chips.
  3. Make sure your ramekins or mugs are microwave safe, or oven safe if you’re baking!

Ingredients

  • 1/2 large spotty banana
  • 1 egg yolk
  • 1 tbsp spelt flour (you can substitute oat flour or all-purpose)
  • 1 tbsp almond flour
  • 1 tbsp non-dairy milk
  • 1/2 tbsp pure maple syrup
  • 1/2 tbsp melted oil, I used coconut
  • 1/4 tsp vanilla extract
  • 1/4 tsp baking powder

Optional mix ins:

  • 1/2 tbsp chocolate chips
  • 1/2 tbsp walnuts

Directions

  1. Mash the banana and whisk it together in a small bowl with the egg yolk, maple syrup, almond milk vanilla and oil.
  2. Add in the dry ingredients, and stir in the chocolate chips and walnuts.
  3. Grease your microwave safe mug or ramekin, and pour batter in.
  4. Microwave for 1 minute, then an additional 30 seconds.

this one combines @kensdressings Simply Vinaigrette Lemon Dressing & Ken’s Simply Vinaigrette Greek Dressing for the ultimate flavor combo— fresh, zesty & full of herbs!

Recipe:
1 lb pasta, I used rigatoni
2 small zucchini, cut into rounds then quarters
1 cup roasted corn, I use pre-roasted frozen corn, thawed.
1 can (15 oz) cannellini beans, drained
1 red bell pepper or 1 cup mini peppers, sliced
4 oz feta cheese, crumbled
⅓ cup green olives, chopped. I used castelvetrano
2-3 cups arugula
Ken’s Simply Vinaigrette Lemon Dressing
Ken’s Simply Vinaigrette Greek Dressing
Salt & pepper
 
1. Prepare the pasta as instructed on the package. Drain and set aside
2. Preheat the oven to 425 F. Add the quartered zucchini to a baking dish and toss with 2 tbsp of Ken’s Simply Lemon Vinaigrette with a pinch of salt. Bake or air-fry for about 25 minutes on the top rack
3. Once the zucchini is ready, add it to a large mixing bowl with the cooked pasta, roasted corn, white beans, feta cheese, olives, sliced peppers, and arugula.
4. In a small bowl, combine ¼ cup of the Ken’s Simply Vinaigrette Lemon + ¼ cup of the Ken’s Simply Vinaigrette Greek. Mix well and toss with the pasta. Season with salt & pepper as needed
5. Leftovers can be refrigerated for up to 4 days.
