Parmesan crusted cauliflower! The newest addition to my cauliflower bites obsession. These cauliflower bites pack in some delicious cheesy flavor, and are perfectly crunchy from the crumb coating.

I made these gluten-free by blending grain-free crackers into crumbs. They’re the perfect little side dish or appetizer to dip into marinara sauce!

Cauliflower is hands down one of my favorite veggies to prep for dinner. It’s super versatile and can take on so many different flavors. There’s honestly nothing it can’t do.

Whether you’re searching for a new side dish, a fun appetizer, or just different ways to eat more vegetables, these cauliflower bites are so perfect!

They’re baked, lightly coated in butter, and are honestly addicting. Snack on them during the day for a fiber-filled snack, or pair them with your favorite protein for dinner.

Parmesan Crusted Cauliflower

What you’ll need to make these parmesan crusted cauliflower

  • 1 large head of cauliflower, cut into florets
  • Butter, you can use vegan or regular
  • Breadcrumbs, regular or gluten-free would work! I love I blending up these grain-free crackers into crumbs
  • Grated parmesan
  • Spices: garlic powder, dry basil, salt & pepper
  • Dipping sauce: they taste amazing with marinara sauce

These bites are so simple to throw together, and packed with tons of flavor!

Parmesan Crusted Cauliflower

I love pairing them with a piece of baked or grilled fish during the week, like this simple pan-seared salmon. Whenever I have leftovers, I pop them in the oven to warm and toss them over a salad for lunch the following day!

Ingredients

  • 1 large head of cauliflower, cut into florets
  • 1/3 cup melted butter or vegan butter
  • 1 1/4 cup breadcrumbs, regular or gluten-free if needed. I blended 1 1/2 cups of these grain-free crackers into crumbs
  • 1/3 cup grated parmesan
  • 1 tsp garlic powder
  • 1 tsp dry basil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • Cooking spray, I use olive oil spray

Directions

  1. Preheat the oven to 400 F
  2. Combine the crumbs, parmesan and spices in a bowl.
  3. Pour the melted butter into a large bowl, and toss in the cauliflower florets. Mix well to make sure they’re all coated.
  4. Line a large baking sheet with parchment paper. Dip each buttered cauliflower floret into the crumb mixture and layer onto the baking sheet. Repeat with remaining cauliflower.
  5. Drizzle any leftover melted butter from the bowl over the cauliflower florets, or spray them lightly with cooking spray.
  6. Bake for 30 minutes, flip and bake for additional 10 minutes.
  7. Serve fresh with your favorite marinara or tomato sauce!

everything is pretty good, however the baking time is too long. for the size of cauliflower pieces as pictured the cooking time is less than 30 minutes.

I appreciate the feedback! Bake time will always vary depending on oven and even the type of pan used. With crusted cauliflower, I find that a minimum of 30 minutes is always ideal

one thing about me is I will always have a colorful pasta salad in the fridge during the warmer months— it’s the perfect way to pack in carbs, fiber and protein for a quick & nourishing lunch
 
this one combines @kensdressings Simply Vinaigrette Lemon Dressing & Ken’s Simply Vinaigrette Greek Dressing for the ultimate flavor combo— fresh, zesty & full of herbs!

Recipe:
1 lb pasta, I used rigatoni
2 small zucchini, cut into rounds then quarters
1 cup roasted corn, I use pre-roasted frozen corn, thawed.
1 can (15 oz) cannellini beans, drained
1 red bell pepper or 1 cup mini peppers, sliced
4 oz feta cheese, crumbled
⅓ cup green olives, chopped. I used castelvetrano
2-3 cups arugula
Ken’s Simply Vinaigrette Lemon Dressing
Ken’s Simply Vinaigrette Greek Dressing
Salt & pepper
 
1. Prepare the pasta as instructed on the package. Drain and set aside
2. Preheat the oven to 425 F. Add the quartered zucchini to a baking dish and toss with 2 tbsp of Ken’s Simply Lemon Vinaigrette with a pinch of salt. Bake or air-fry for about 25 minutes on the top rack
3. Once the zucchini is ready, add it to a large mixing bowl with the cooked pasta, roasted corn, white beans, feta cheese, olives, sliced peppers, and arugula.
4. In a small bowl, combine ¼ cup of the Ken’s Simply Vinaigrette Lemon + ¼ cup of the Ken’s Simply Vinaigrette Greek. Mix well and toss with the pasta. Season with salt & pepper as needed
5. Leftovers can be refrigerated for up to 4 days.
