Paprika Chicken and Potatoes

Paprika chicken and potatoes is a simple weeknight dinner made with minimal ingredients that comes together all in one dish. Gold and sweet potatoes are seasoned and baked, then finished in the oven with sweet paprika spiced chicken thighs.

The potatoes get perfectly golden and tender, and the chicken stays juicy with tons of flavor.

Paprika Chicken and Potatoes

Simple, weeknight dinners

If you’ve tried my Harissa Chicken or Salmon Couscous Salad, you’ll love the flavors in this recipe, too. This dish is made with simple ingredients that you likely have around.

I especially love this dish because it takes almost no time to throw together- the oven does all of the magic! Everything gets baked in one pan, and can be served with your favorite vegetable side or salad.

Paprika Chicken and Potatoes

Ingredients you’ll need

  • Boneless, skinless chicken thighs, 6 pieces. I love using chicken thighs for this recipe for their tender texture and juicy flavor, but feel free to sub chicken breast if preferred
  • Sweet potatoes and yellow/gold potatoes
  • Spices- paprika, garlic, salt & pepper
  • Date syrup, for a little sweetness
  • Fresh parsley
  • Olive oil
  1. Slice the potatoes into 3″ wedges, then toss them with olive oil, paprika, garlic, salt & pepper
  2. Roast the potatoes in an oven-safe dish on 400 F for about 30 minutes until fork tender
  3. In the meantime, marinate the chicken thighs with the olive oil, parsley, spices and date syrup
  4. Remove the potatoes from the oven and give them a toss. Place the chicken on top with any remaining marinade
  5. Finish baking for another 35 minutes
Paprika Chicken and Potatoes

This recipe is great for a crowd, holiday dinner, or small family weeknight meal. Leftovers reheat well and can be served with pearled couscous, roasted vegetables or a fresh side salad.

Chicken breast substitute?
Can I substitute the boneless chicken thighs for chicken breast and if so would you change anything with the temperature or time? Thanks!

Hi Candice, if you leave the chicken breast whole, I would add another 10 or so minutes for a thick piece. You can also cut the breast into strips or cubes and keep the recipe as is!

Delicious and easy!
Came together really nicely. Very easy recipe and instructions. So delicious! Will definitely make again. I had honey and used that instead of the date syrup. The chicken was so flavorful. I used bone-in thighs and it still turned out perfectly. Served with green beans.

This is a paid collaboration with @avocadosloveonetoday. These grilled chicken avocado summer rolls with a creamy avocado jalapeño salsa for dipping are an easy, delicious way to eat more avocado

Did you know that avocados are a good source of vitamin K and offer 136 micrograms of lutein per serving? Lutein concentrates in areas of the brain, where it may help support memory, executive function, and overall brain health. 🧠

An observational study of over 2800 older adults found that people who eat, on average, about 50 grams of guacamole or 70 grams of fresh avocado in a day have better cognitive function than non-consumers. The Avocado Nutrition Center supported this analysis based upon the NHANES survey data using 24-hour dietary recalls. Although the findings cannot be considered causal, and more studies are needed to confirm these findings, the data suggest a role for avocados in cognitive health.https://doi.org/10.3389/fnut.2021.746453
