Sesame Date Grain-free Granola

Grain-free Granola

Based off my original grain-free granola, this nut & seed based granola is such a delicious snack to keep around. It’s lightly sweetened with date syrup and loaded with omega-3 fat and fiber. It’s easily customizable and comes together so easily.

Grain-free granola is the perfect crunchy topping for a smoothie bowl, yogurt bowl, or homemade trail mix!

I always keep some sort of granola or nut mix in my pantry, but I always prefer making my own whenever my nut & seed supply accumulate. I used a combination of different nuts and seeds like almonds, walnuts, sesame seeds and chia seeds, making this the perfect gluten-free treat that’s packed with heart-healthy fats.

The nuts and seeds get mixed together with date syrup and coconut oil, and come out so crisp and crunchy.

What you’ll need to make grain-free granola:

Dry ingredients:

  • almonds
  • walnuts 
  • sesame seeds
  • chia seeds
  • cinnamon 

Wet ingredients:

  • coconut oil
  • date syrup
  • vanilla extract
Grain-free Granola
  1. Combine the nuts & seeds together in a large bowl
  2. Melt the coconut oil then whisk in the date syrup and vanilla extract until smooth
  3. Pour the wet mixture into the dry and stir to combine
  4. Flatten onto a parchment lined sheet pan then bake for 25-30 minutes
  5. Let cool completely, then break into clusters

How to store your granola

I store my granola in an air-tight jar on the counter or refrigerator. It will stays fresh for up to 2 weeks, but it can also be frozen for up to 3 months and enjoyed straight from the freezer.

Sesame date grain-free granola is an easy and nourishing snack to have around. Packed with whole grains, omega-3 fats and made with the simplest ingredients.

Ingredients

  • 1 cup almonds, roughly chopped
  • 1 cup cashews, chopped
  • 1 cup raw walnuts
  • 1/4 cup chia seeds
  • 1/4 cup sesame seeds
  • 1 tsp cinnamon
  • 3 tbsp coconut oil
  • 1/3 cup date syrup (silan)
  • 1 tsp vanilla extract
  • Pinch salt

Directions

  1. Preheat the oven to 325 F
  2. In a large bowl, combine the nuts, seeds and cinnamon and mix together.
  3. Melt the coconut oil in the microwave for 1 minute, then whisk it together with the date syrup and vanilla extract until thick and smooth.
  4. Pour the wet mixture over the nuts and stir together until evenly combined.
  5. Transfer to a parchment lined baking sheet and flatten down using a rubber spatula.
  6. Bake for about 25-30 minutes on the middle rack. Remove from oven and let cool completely before breaking apart. The granola may still feel a little wet when you remove it from the oven, but it will harden as it cools.
  7. Once cool, break apart into clumps or pieces and store in an airtight container for about 2 weeks, or freeze for 3 months. After breaking apart, you can mix in dried fruit, chocolate chips or freeze-dried fruit if desired.

this one combines @kensdressings Simply Vinaigrette Lemon Dressing & Ken’s Simply Vinaigrette Greek Dressing for the ultimate flavor combo— fresh, zesty & full of herbs!

Recipe:
1 lb pasta, I used rigatoni
2 small zucchini, cut into rounds then quarters
1 cup roasted corn, I use pre-roasted frozen corn, thawed.
1 can (15 oz) cannellini beans, drained
1 red bell pepper or 1 cup mini peppers, sliced
4 oz feta cheese, crumbled
⅓ cup green olives, chopped. I used castelvetrano
2-3 cups arugula
Ken’s Simply Vinaigrette Lemon Dressing
Ken’s Simply Vinaigrette Greek Dressing
Salt & pepper
 
1. Prepare the pasta as instructed on the package. Drain and set aside
2. Preheat the oven to 425 F. Add the quartered zucchini to a baking dish and toss with 2 tbsp of Ken’s Simply Lemon Vinaigrette with a pinch of salt. Bake or air-fry for about 25 minutes on the top rack
3. Once the zucchini is ready, add it to a large mixing bowl with the cooked pasta, roasted corn, white beans, feta cheese, olives, sliced peppers, and arugula.
4. In a small bowl, combine ¼ cup of the Ken’s Simply Vinaigrette Lemon + ¼ cup of the Ken’s Simply Vinaigrette Greek. Mix well and toss with the pasta. Season with salt & pepper as needed
5. Leftovers can be refrigerated for up to 4 days.
