One of my favorite things about this recipe is how versatile it is. It works as an easy weeknight dinner, a healthy lunch, or even an appetizer for entertaining. You can customize the filling with whatever vegetables you have on hand, add some heat with sriracha or chili flakes, or top everything with chopped peanuts, fresh herbs, or a squeeze of lime for even more flavor.

Ingredients you’ll need for ground chicken lettuce cups

  • Ground chicken
  • Bell pepper and diced onion
  • Olive oil
  • Salt & pepper

For the sauce

  • Low-sodium soy sauce
  • Maple syrup
  • Garlic
  • Ginger
  • Scallions
  • Sesame seeds
  1. Saute the diced vegetables in olive oil until browned
  2. Add in the ground chicken with salt & pepper and cook together for another 5-7 minutes, breaking up the chicken as you cook it
  3. Whisk together the marinade ingredients in a bowl, then pour it into the pan
  4. Cook the chicken mix with the sauce for another 5-7 minutes, until it absorbs all of the flavors
  5. Serve over lettuce cups with your favorite sauce

Ingredients

  • 1 lb ground chicken
  • 1 red bell pepper diced
  • 1 yellow onion diced
  • 3 tbsp olive oil
  • Salt & pepper
  • Bib lettuce or mini romain hearts, to serve

Stir-fry sauce

  • 1/4 cup low-sodium soy sauce
  • 2 tbsp maple syrup
  • 2 cloves garlic minced
  • 1 tsp grated ginger
  • 3 scallions. chopped
  • 2 tbsp sesame seeds
  • 1 tbsp sesame oil
  • Salt & pepper, to taste

Spicy Mayo

  • 1/2 cup mayonnaise
  • 1/4 cup sriracha. Add 1-2 more tbsp for a spicier sauce
  • 1 tsp sesame oil
  • Juice from 1/2 lime

Directions

  1. Heat a skillet on medium heat with 3 tbsp of olive oil.
  2. Add the diced pepper and onion and saute together for about 7-8 minutes.
  3. Add the ground chicken to the pan, breaking it apart with a spatula or meat masher. Season with salt and pepper, and cook until browned with the veggies for another 5-7 minutes.
  4. Combine the sauce ingredients together in a small bowl. Pour the sauce into the pan and cook on medium heat for 10-15 minutes, until the chicken mixture absorbs all of the sauce. Adjust salt as needed.
  5. Serve in lettuce cups with spicy mayo or your favorite hot sauce
