Cottage Cheese Pizza

The cottage cheese hype continues with this 6-ingredient cottage cheese pizza crust. As if I needed a reason to love cottage cheese any more, this recipe is so easy to whip up for a light and nourishing lunch, and is the perfect vehicle for all of your favorite pizza toppings.

It’s insanely easy to make, light & fluffy, and a delicious protein-rich dish to have on hand. It’s made similarly to my Greek Yogurt Pizza Dough, and uses all-purpose flour, cottage cheese, baking powder and salt. The dough is prepped, pre baked and then baked again with sauce and cheese.

Cottage Cheese Pizza

This recipe is a go-to lunch in our house when I want something satisfying yet healthy. If you’re not a fan of the texture of cottage cheese but still want to find ways to enjoy it, this recipe is for you. The cottage cheese gets blended before getting mixed into the flour, so you’re left with a smooth and fluffy dough.

I love to top my pizza with cherry tomatoes and balsamic glaze, or with a drizzle of chili oil and hot honey. The topping possibilities are truly endless.

Cottage Cheese Pizza

Ingredients you’ll need to make cottage cheese pizza

  • All-purpose flour- I have not tested this with any flour substitutes
  • Full-fat cottage cheese– I suggest full-fat for best texture
  • Baking powder
  • Salt
  • Marinara sauce
  • Shredded cheese

Other toppings:

  • Cherry tomatoes + balsamic glaze
  • Hot honey
  • Chili oil
  • Fresh herbs

How to make cottage cheese pizza dough

  1. Start by blending the cottage cheese in a food processor or blender until smooth.
  2. Next, combine the flour, baking powder and salt in a bowl, then mix in the cottage cheese. Knead the dough with your hands to evenly incorporate the flour and cottage cheese. You may need to add more flour to your hands as needed to form a dough
  3. Transfer the dough to a lightly floured surface and divide into two, or make one large pizza- I like to roll my dough on parchment paper. Roll the dough out to thin
  4. Pre-bake the dough on 400 F for about 8-10 minutes
  5. Top with your sauce, cheese and toppings, then finish baking the pizza for another 8-10 minutes

How to serve your pizza

This recipe yields 1-2 servings, depending on how you plan to eat it. I love to split the dough into two for my husband and I, and serve it with a side salad for lunch, or with baked salmon for dinner for a heartier meal.

Here are a few serving suggestions for your cottage cheese pizza-

  • serve with a side of Pistachio Herb Salmon
  • enjoy for lunch with White Bean Beet Salad
  • prepare it as an appetizer for friends with some Puff Pastry Pizza Pinwheels and Spicy Feta Stuffed Olives

Ingredients

  • 1 cup full-fat cottage cheese
  • 1 cup all-purpose flour plus more for dusting
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup marinara sauce
  • 1/2 cup shredded cheese
  • Olive oil, to drizzle

Top with

  • Tomatoes + balsamic glaze
  • Chili oil + hot honey

Directions

  1. Preheat the oven to 400 F
  2. Add the cottage cheese to a food processor or blender and blend until smooth.
  3. Add the flour, baking powder and salt to a bowl and mix. Pour in the cottage cheese and combine with your hands until a dough forms. This will take a few minutes of kneading with your hands to fully incorporate the cottage cheese into the flour. Sprinkle in extra flour as needed until the dough is easy to work with.
  4. Divide the dough into two, or keep as one large pizza. Lightly sprinkle some flour over parchment paper and roll out the dough. Place onto a parchment lined baking sheet.
  5. Pre-bake the crusts for 8-10 minutes.
  6. Remove the crust and add your sauce, cheese, and any toppings you like. Lightly drizzle the pizza with olive oil
  7. Bake for another 8-10 minutes. Serve right away for best results.
