Chicken with Peas & Potatoes


There’s something undeniably comforting about a meal that serves so much flavor, and doesn’t require much prep work. With just a few simple ingredients and some cook time in the oven, this chicken with peas and potatoes comes together so easily.

The chicken comes out tender, and the peas and potatoes add the perfect hearty touch. They’re seasoned with a blend of warm spices like allspice and turmeric, and sweetened with a touch of date syrup. Serve this over fluffy white rice for the ultimate comfort food.

Comfort in one pan


This one-pan dish is truly so comforting, and delicious for a weeknight dish, shabbat main course, or holiday dinner. The allspice give this dish most of its flavor. It’s a spice used in many cultures, and adds a sweet, nutty flavor to the chicken and veggies, similar to cinnamon and nutmeg. 

What you’ll need to make chicken with peas & potatoes

  • Chicken drumsticks- you can use bone-in chicken thighs if preferred
  • Frozen peas
  • Baby yellow potatoes, or larger potatoes cut into quarters
  • Date syrup
  • Olive oil
  • Yellow onion
  • Spice blend- paprika, allspice, garlic powder, salt, pepper & turmeric 
  1. Start by sautéeing the sliced onion in olive oil until browned.
  2. Add in the sliced baby potatoes and toss together with the spice blend. 
  3. Pour the water into the pan and add the bag of frozen peas. Mix together
  4. Nestle the chicken into the pan, and drizzle everything with the date syrup.
  5. Cover the pan and cook in a 400 F degree oven for 60 minutes, then uncovered for 20 minutes

How to serve

I like to serve this dish over white basmati or jasmine rice, or with couscous. If you wanted a more elevated side dish, here are a few that would pair well with this dish-

  • Herb Rice and Chickpeas
  • Roasted Cauliflower and Couscous
  • Mushroom Rice Pilaf

I love serving this for shabbat, holidays, or as a cozy weeknight dinner. The leftovers are even better the next day, and truly hit the spot when you’re craving a home-cooked meal.

Ingredients

  • 8 chicken drumsticks
  • 1 1/2 lbs baby yellow potatoes sliced in half
  • 2 yellow onions sliced into strips
  • 1 bag frozen peas 10 oz
  • 1 1/2 cups water
  • 1 tbsp date syrup
  • 2 tbsp paprika
  • 1 tbsp allspice
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 1/4 tsp salt
  • 1/4 tsp turmeric
  • 1/4 cup olive oil

Directions

  1. Preheat the oven to 400 F
  2. Heat a large braiser or skillet on medium heat then pour in the olive oil. Once the oil is hot, add the sliced onions to the pan. Saute for about 15 minutes, stirring occasionally, until slightly browned.
  3. Add the sliced potatoes and spice blend and mix together
  4. Pour the water into the pan, then mix in the peas. Nestle the chicken into the veggies, then drizzle the pan with 1 tbsp of date syrup.
  5. Cover the pan with a lid, and bake covered for 60 minutes, then uncovered for 20 minutes.
  6. Spoon any extra sauce over the top of the chicken before serving.

Recipe:
1 lb pasta, I used rigatoni
2 small zucchini, cut into rounds then quarters
1 cup roasted corn, I use pre-roasted frozen corn, thawed.
1 can (15 oz) cannellini beans, drained
1 red bell pepper or 1 cup mini peppers, sliced
4 oz feta cheese, crumbled
⅓ cup green olives, chopped. I used castelvetrano
2-3 cups arugula
Ken’s Simply Vinaigrette Lemon Dressing
Ken’s Simply Vinaigrette Greek Dressing
Salt & pepper
 
1. Prepare the pasta as instructed on the package. Drain and set aside
2. Preheat the oven to 425 F. Add the quartered zucchini to a baking dish and toss with 2 tbsp of Ken’s Simply Lemon Vinaigrette with a pinch of salt. Bake or air-fry for about 25 minutes on the top rack
3. Once the zucchini is ready, add it to a large mixing bowl with the cooked pasta, roasted corn, white beans, feta cheese, olives, sliced peppers, and arugula.
4. In a small bowl, combine ¼ cup of the Ken’s Simply Vinaigrette Lemon + ¼ cup of the Ken’s Simply Vinaigrette Greek. Mix well and toss with the pasta. Season with salt & pepper as needed
5. Leftovers can be refrigerated for up to 4 days.
